This TikTok viral cottage cheese flatbread recipe requires just 2 simple ingredients. Cottage cheese and eggs. In addition, you may want to add extra seasonings such as garlic powder or Italian seasoning. Here are some more details:

  • Cottage cheese. We used full fat cottage cheese, it has a much richer taste and gives the viral bread a better texture. As an alternative you can also use 2% cottage cheese, or plant based cottage cheese. Low fat cottage cheese is not recommended.
  • Eggs. The TikTok viral recipe blends cottage cheese with eggs. You’ll need 2 whole eggs, or one whole egg plus one egg white. I do not recommend using egg whites only, as they won’t give your bread the same taste and texture.
  • Seasonings of choice. Cottage cheese has already plenty of flavor by itself, rich and salty. But you can add other herbs and seasonings such as onion powder, garlic powder, everything but the bagel seasoning, dried oregano, Italian seasonings, or more sea salt.

How to make cottage cheese flatbread

Here’s how to make the TikTok viral cottage cheese flatbread recipe with 2 ingredients only. As always, you can find the detailed directions in the recipe card at the end of this blog post.

  1. Prepare for baking ⏲️. Heat oven to 350°F (180°C) and line a 9 x 13 baking sheet with parchment paper. Grease the parchment paper or baking sheet very well to prevent sticking.
  2. Make low carb dough ?. Add cottage cheese, eggs and seasonings of choice to a blender and process until smooth. Pour the mixture into the prepared baking sheet and spread out evenly.

How to store cottage cheese flatbread?

Making cottage cheese flat bread in bulk is perfect for low carb and high protein meal prep. Before storing, allow the flat bread to cool completely to room temperature. Once it has cooled, place it in an airtight container or wrap it tightly in plastic wrap or aluminum foil and store in the refrigerator for up to 3 days. For a longer storage, wrap the bread in plastic wrap and then place it in a resealable freezer bag. Freeze cottage cheese bread for up to a month.

Recipe tips

  • Grease the baking sheet very well with olive oil, cooking spray or butter before pouring in the blended cheese. Once again, you have to GREASE the parchment paper and/or baking sheet very, very well otherwise the flatbread will stick to the pan!
  • Do not make cottage cheese flatbread with nonfat cottage cheese, or it will taste like cardboard. Full fat or 2% cottage cheese gives the best result in terms of taste and texture.
  • Remove the liquid on top of the cheese, if there is any. You’ll want a thick and firm cheese, otherwise the flatbread is going to turn out soggy and may stick to the pan.
  • Avoid adding too much salt, or the protein flatbread will taste too salty. Cottage cheese already contains salt by itself, so you should not go overboard with it. For more flavor you can blend in other seasonings such as garlic powder or onion powder. I like using low sodium seasoning mix.
  • Customize this recipe to your likings. Experiment with seasonings, blend in some low fat shredded cheddar cheese or Parmesan cheese, or try cottage cheese with chives and herbs.

Serving ideas

  • Spread some Italian pesto over of your low carb bread and serve with sliced mozzarella, ham, or chicken breast for more protein.

Can I make cottage cheese flatbread with no egg?

Yes, theoretically you could make a 1 ingredient cottage cheese flatbread without eggs, but the result is not the same. One important thing to keep in mind is that you must remove any excess liquid on top of cottage cheese before pouring it over the baking sheet.

Can I make cottage cheese flatbread with egg whites?

I do not recommend making this recipe with just egg whites. If you want to reduce fats and calories, use one whole egg and one egg white. But egg whites alone won’t produce the same result.

Can I use ricotta cheese?

Yes, full fat ricotta cheese has a similar texture, which makes it a suitable alternative. Just keep in mind that ricotta is creamier and slightly milder in flavor, so you may want to add some extra salt. For the best results, drain any excess liquid from the ricotta before using it.

Can I use Greek yogurt or quark?

I haven’t tried it personally, and I cannot guarantee that you can make the viral flatbread with Greek yogurt or quark. But I think that thick full fat Greek yogurt should work fine. Just drain any liquid on top of the yogurt and add more salt.

    Worked like a charm with 200g cottage cheese, 1 XL egg, 1 egg white, and some spices! I had heared that 2 eggs gives the flatbread a bit of an eggy taste, but the flavor was perfectly neutral with the egg-egg white combination. I used the flatbread as a roti/naan substitute and then the next day for a breakfast wrap.

  2. Hi Matteo, when do you add the toppings to the bread? I’d like them to bake as well but the 40 mins. would be too long.
