My girlfriend and I are heavy consumers of cottage cheese. It’s so tasty and versatile that we use it for many recipes like cottage cheese pancakes, cottage cheese brownies and even cottage cheese pizza. Plus, it’s healthy and packed with protein.
Long store made short, yesterday we run out of cottage cheese again. So we went to Aldi to get some but none was left. The same for Lidl, nothing in the fridge shelves. Well, we sadly walked home with empty bags and all our cravings. After dinner I opened TikTok and a cottage cheese flatbread recipe showed up. Then another one, then another one and another one. Was the TikTok algorithm reading my mind – again – or what?! Is it a new trend like the cookie croissant, blueberry yogurt clusters, or frozen banana snickers?
Yes, cottage cheese flatbread is a thing. It’s the newest healthy TikTok viral recipe. I love it, and you will love it too!

2 Ingredient cottage cheese flatbread
This TikTok viral cottage cheese flatbread recipe requires just 2 simple ingredients. Cottage cheese and eggs. In addition, you may want to add extra seasonings such as garlic powder or Italian seasoning. Here are some more details:
- Cottage cheese. We used full fat cottage cheese, it has a much richer taste and gives the viral bread a better texture. As an alternative you can also use 2% cottage cheese, or plant based cottage cheese. Low fat cottage cheese is not recommended.
- Eggs. The TikTok viral recipe blends cottage cheese with eggs. You’ll need 2 whole eggs, or one whole egg plus one egg white. I do not recommend using egg whites only, as they won’t give your bread the same taste and texture.
- Seasonings of choice. Cottage cheese has already plenty of flavor by itself, rich and salty. But you can add other herbs and seasonings such as onion powder, garlic powder, everything but the bagel seasoning, dried oregano, Italian seasonings, or more sea salt.
How to make cottage cheese flatbread
Here’s how to make the TikTok viral cottage cheese flatbread recipe with 2 ingredients only. As always, you can find the detailed directions in the recipe card at the end of this blog post.
- Prepare for baking ⏲️. Heat oven to 350°F (180°C) and line a 9 x 13 baking sheet with parchment paper. Grease the parchment paper or baking sheet very well to prevent sticking.
- Make low carb dough ?. Add cottage cheese, eggs and seasonings of choice to a blender and process until smooth. Pour the mixture into the prepared baking sheet and spread out evenly.
- Bake cottage cheese bread ?. Bake cottage cheese flat bread in hot oven for 35 to 40 minutes. Enjoy with your favorite toppings as a low carb alternative to bread.
How to store cottage cheese flatbread?
Making cottage cheese flat bread in bulk is perfect for low carb and high protein meal prep. Before storing, allow the flat bread to cool completely to room temperature. Once it has cooled, place it in an airtight container or wrap it tightly in plastic wrap or aluminum foil and store in the refrigerator for up to 3 days. For a longer storage, wrap the bread in plastic wrap and then place it in a resealable freezer bag. Freeze cottage cheese bread for up to a month.
Recipe tips
- Grease the baking sheet very well with olive oil, cooking spray or butter before pouring in the blended cheese. Once again, you have to GREASE the parchment paper and/or baking sheet very, very well otherwise the flatbread will stick to the pan!
- Do not make cottage cheese flatbread with nonfat cottage cheese, or it will taste like cardboard. Full fat or 2% cottage cheese gives the best result in terms of taste and texture.
- Remove the liquid on top of the cheese, if there is any. You’ll want a thick and firm cheese, otherwise the flatbread is going to turn out soggy and may stick to the pan.
- Avoid adding too much salt, or the protein flatbread will taste too salty. Cottage cheese already contains salt by itself, so you should not go overboard with it. For more flavor you can blend in other seasonings such as garlic powder or onion powder. I like using low sodium seasoning mix.
- Customize this recipe to your likings. Experiment with seasonings, blend in some low fat shredded cheddar cheese or Parmesan cheese, or try cottage cheese with chives and herbs.
Serving ideas
- Spread some Italian pesto over of your low carb bread and serve with sliced mozzarella, ham, or chicken breast for more protein.
- Top with tuna and sliced avocado, then drizzle with mayo, sriracha or hot sauce for a keto spicy tuna sandwich.
- Fill with sliced ham, sliced cheese, homemade Big Mac sauce, fresh lettuce and sliced tomatoes. The perfect healthy sandwich for lunch.
- Serve the TikTok cottage cheese bread with fresh slices of mozzarella, sliced tomatoes, basil leaves and a drizzle of olive oil for an Italian Caprese sandwich.
- Top with tomato sauce and shredded cheese, heat it up and turn your flat bread into a protein pizza.
- Stuff it with your favorite fillings and serve alongside a fresh salad like cucumber salad, cucumber tomato salad, keto Big Mac salad, or watermelon salad with feta.
- Spread some whipped cottage cheese all over your protein wrap, then top with fresh veggies, sliced tomatoes, and sliced mozzarella.
FAQ – Frequently asked questions
No, the viral cottage cheese flatbread must be baked in the oven. I have tried halving the quantities using one egg and then cooking it in a Ninja air fryer, but it did not turn out good.
Yes, theoretically you could make a 1 ingredient cottage cheese flatbread without eggs, but the result is not the same. One important thing to keep in mind is that you must remove any excess liquid on top of cottage cheese before pouring it over the baking sheet.
I do not recommend making this recipe with just egg whites. If you want to reduce fats and calories, use one whole egg and one egg white. But egg whites alone won’t produce the same result.
Yes, full fat ricotta cheese has a similar texture, which makes it a suitable alternative. Just keep in mind that ricotta is creamier and slightly milder in flavor, so you may want to add some extra salt. For the best results, drain any excess liquid from the ricotta before using it.
I haven’t tried it personally, and I cannot guarantee that you can make the viral flatbread with Greek yogurt or quark. But I think that thick full fat Greek yogurt should work fine. Just drain any liquid on top of the yogurt and add more salt.
Is it eggy? Does it taste like an omelette or quiche? It is tasty? There are many questions you may have. Well, it may surprise you but the viral cottage cheese flatbread does not taste eggy. It’s cheesy and flavorful, with a crunchy texture.
This TikTok viral flatbread is crunchy. Unlike many people think, it is not soggy at all. What’s important is that you bake it well, for about 40 minutes until it is not soft anymore.
One entire flatbread has about 288 calories, 41 grams of protein, 5.8 grams of carbs and 10.7 grams of fat. Precise nutritional values may vary depending on the fat percentage of the cottage cheese used and additional ingredients you may add.

Worked like a charm with 200g cottage cheese, 1 XL egg, 1 egg white, and some spices! I had heared that 2 eggs gives the flatbread a bit of an eggy taste, but the flavor was perfectly neutral with the egg-egg white combination. I used the flatbread as a roti/naan substitute and then the next day for a breakfast wrap.
Hey dear Puja,
thanks a LOT for your kind feedback. I am incredibly happy to hear that your cottage cheese flatbread turned out good. Great idea using it as a low carb substitute for naan. I love it!
Have a great day,
Matteo
Hi Matteo, when do you add the toppings to the bread? I’d like them to bake as well but the 40 mins. would be too long.
Hey dear Pauline,
thanks a lot for your comment. Good question! You can take the cottage cheese bread out of the oven after 30 minutes, add the toppings, and put back in the oven for additional 10 minutes until it is baked through. The perfect way to make cottage cheese flatbread pizza.
I wish you a great day,
Matteo
Just made. I’m gluten free so I was excited for this. Turned out great Thank you.
Hey dear Maureen!
Thanks a lot for your comment, I am so glad you liked my gluten-free cottage cheese flatbread recipe ๐
Have a great day,

Can you use cream cheese instead if cottage cheese?
Hey dear Evie,
thanks a lot for your question. I haven’t tried it with cream cheese and I am not fully sure the it works. I highly doubt that it works, however..The texture is different.
Let me know if you try it!
Have a great Sunday,
Matteo
I’m making it right now– it’s in the oven. Looking forward to trying, thank you
Hey dear Mims,
thanks a lot for your comment!! I’m so happy you find this recipe helpful ๐ I hope you liked it!
Have a great day,
Matteo
Do you think dry curds would work as well?
Hey dear Wendy,
I haven’t tried it personally yet, but I think that dry curds cottage cheese may work. The only thing is that your flatbread may turn out slightly drier.
Let me know, in case you try it!
Have a great day,
Matteo
If I make 1/2 of the recipe do you think it will turn out as well?
Hey dear Karilyn,
yes indeed it works! Just divide all quantities by two. So use one egg and 1/2 cup cottage cheese ๐
Kind regards,
Matteo
How long will they keep after making?
Hey dear Jeanette,
this cottage cheese bread will last for up to 3 days, if you store it in an airtight food container in the fridge.
Kind regards,
Matteo
Hi Matteo! Which size baking sheet do you recommend?
Hey dear Krista,
thanks a lot for your question ;). I will add this (important) information to the recipe card. I used a 9 x 13 baking sheet and it worked great. As long as the baking sheet is wide enough to hold the cottage cheese mixture, it should be fine.
I hope you find my answer as helpful.
Have a great day,
Matteo
Iโm sorry to be a dip, but when you say grease the baking sheet, is that before or after you put parchment paper down.
Hey dear Elinor,
thanks a lot for your comment. You need to grease the parchment paper very well, that is to say the surface over which you pour the cottage cheese egg mixture to be baked.
I hope I could help you!
Kind regards,
Matteo
Why do you use parchment paper AND grease the baking sheet both? Do you grease the sheet and put parchment paper on top of that???
Hey,
thanks for your comment. I understand that the directions were a bit confusing and therefore I have updated the post. You should grease either the parchment paper or the baking sheet very well, depending on where you bake your cottage cheese flatbread. If the baking sheet is well covered with parchment paper, then greasing just parchment paper should be more than enough.
Have a great day,
Matteo
Waoo !!! Is a good idea because as you said that flat bread is of low of carbs that is I want it ! Thank you my dear Matteo ?
Good morning my dear Liza,

Could you
Use ricotta in place of cottage cheese?
Hey dear Tania,
yes, you can replace cottage cheese with full fat ricotta. Just one thing to keep in mind, remember to drain any excess liquid that may have formed on top of the ricotta cheese before mixing it with eggs ๐
I hope you will like your viral flatbread with ricotta!
Have a great day,
Matteo

Well, it worked but…not the same taste.
