When summer hits, so do our cravings for fresh dishes. Frozen yogurt, protein ice cream and frozen lemonade are on the menu. Oh, and let’s not forget salads. There are so many options that we never get bored. My girlfriend makes the best cucumber salad and cucumber tomato salad, she knows how to make me happy!

Last Friday we were grocery shopping when a perfectly ripe, juicy watermelon caught our attention. It was pretty late and we were looking for refreshing dinner ideas. Since it was already cut, we grabbed a large half watermelon, feta and onion for a quick and easy healthy dinner. There was still a cucumber in the fridge, so why not mixing all together. Our watermelon salad with feta cheese was so tasty and refreshing that we had to share it here on the blog.

Ingredients for watermelon salad

It’s so easy to make watermelon feta mint salad on a hot summer day. As the name suggests, this recipe requires just 3 main ingredients, plus cucumber, red onion and a simple dressing. Read further to learn everything about the recipe ingredients.

  • Watermelon. We used half of a large watermelon, but you may need an entire watermelon if it is small. Cut and peel it, removing the seeds if it is necessary. Then, dice into cubes of about 1 inch each. We’ll need 4 cups of those cubes.
  • English cucumber. Also known as seedless or European cucumbers, they’re bigger, have a thin skin, taste sweeter, and hardly have seeds. I recommend English cucumbers, but you can use other types too.
  • Red onion. The onion gives plenty of flavor and a nice crispy texture. Peel and wash the onion, then slice it thinly and add to your salad.
  • Mint leaves. There is so much to much to say about salad with watermelon feta and mint. The fresh leaves of mint add a herbal note and plenty of fresh flavors.
  • Feta cheese. I recommend creamy feta cheese, crumbled before mixing it with the other ingredients. Combining Greek feta and watermelon creates the perfect contrast of flavors, sweet and salty at the same time.

For the best taste, this easy watermelon salad recipe comes with a simple dressing made of olive oil, lime juice and honey. Season with salt and black pepper to your liking, then drizzle on top of the feta watermelon mix. But make sure you don’t go overboard with salt, feta cheese is already pretty salty.

How to make watermelon salad

  1. Prepare the dressing. In a small bowl or mason jar, whisk olive oil with lime juice, honey, salt and pepper. Give it a good stir, then aside for later.
  2. Assemble the salad. In a large bowl, combine diced watermelon with diced cucumbers, onion slices, mint leaves, and crumbled feta cheese. Pour the dressing over your salad and toss to combine.
  3. Serve or store. This watermelon cuke salad tastes better when it is fresh, the same day of making it. In case you have leftovers, place in an airtight food container and keep refrigerated for up to 2 days.

  • Mix in a couple tablespoons of corn for more taste and texture.

Ingredients 

Salad Dressing

  • 2 tbsp olive oil
  • 2 tbsp lime juice

Feta Cheese Watermelon Salad

  • 4 cups watermelon, diced
  • 1 cup English cucumber, diced
  • red onion, thinly sliced
  • cup mint leaves, lightly packed
  • ½ cup feta cheese, crumbled

How to Store Watermelon Salad with Feta Cheese

This watermelon salad recipe is best served fresh, the same day when you make it. But you can also make it ahead and eat in the next days. To store, place leftovers in an airtight food container, seal with lid, and refrigerate for a maximum of 2 days. Before serving, gently toss to rejuvenate the watermelon salad with dressing.
