There’s so much to say about this simple cucumber salad recipe. I honestly don’t know where to start, so I’ll just say that I love it. I love it so much that when summer kicks into full gear, we have it every night. When we don’t make cucumber tomato salad, of course. A couple of days ago I posted on my Instagram a story about my cuc salad, sharing my latest obsession with the net. I was impressed at the amount of people that replied back begging for the recipe. Here I am, writing one of the best summer recipes ever. I’m sure you will love it.

What is cucumber salad made of?

The cucumber salad recipe ingredients are so simple. You only need cucumber and onion as a base, vinegar, sugar and salt are for the dressing. Stick around and keep on reading to learn everything about ingredients, replacements and recommendations.

  • English cucumbers. Also sold under the name of seedless or European cucumbers, they are larger, with a thin outer skin, a sweeter flavor, and almost no seeds. English cucumbers are the best for salad, but you can also use other varieties.
  • Red onion. I like using red onion because it gives the dish the best taste, texture and colors. You can also slice white onion or scallions, if you prefer.
  • Apple cider vinegar. This is my personal choice, I love the sweet and sour taste of apple cider vinegar. It is more delicate and slightly fruity, perfect for this refreshing summer dish. You can substitute ACV with white vine vinegar or red white vinegar.
  • Granular sugar. Marinating cucumber and onion in vinegar and sugar gives this salad the best flavor. Sweet and tangy, almost addicting. You can use regular sugar, or replace with sugar-free keto sweeteners, if necessary.
  • Salt. This is a simple cucumber salad recipe, seasoned with just a bit of salt. But you can customize your dish with additional seasonings and herbs such as ground black pepper and fresh dill.

How to make cucumber salad

  1. Gather all ingredients. If you haven’t already, start by cutting cucumber and onion into thin slices. You can do this ahead of time, or just before preparing the salad.
  2. Toss cucumber & onion in vinegar. In a large mixing bowl, combine sliced cucumbers with onion, apple cider vinegar, sugar and salt. Toss well, then refrigerate for at least 20 minutes so that the cuke salad can get all the good flavors.
  3. Serve marinated cucumbers. After they have chilled, taste and season with more salt if it is necessary. You can also add extra seasonings and herbs, such as black pepper and fresh dill. Serve as a refreshing addition to your meals.

Storage directions

Transfer leftovers into an airtight container, then refrigerate. If properly stored, cucumber and red onion salad can last up to three days. But it is recommended to consume it within the first day, it tends to lose freshness and texture quite quickly. Before serving, give it a gentle stir to rejuvenate the vegetables with dressing and flavors.

Should I peel cucumbers for salad?

In general, there is no need to peel cucumbers for salad, but it depends. This recipe uses and recommends English cucumbers which have a much thinner skin, so I don’t take it off. If you make cuc salad with regular cucumbers, however, you may want to remove it. You may also want to spoon out all the seeds.

How can I make cucumber salad not watery?

Here are two tips for the best cucumber salad that doesn’t get soggy or watery. First, marinate it in vinegar with both salt and sugar. The salt helps take out all the excess moisture from the vegetables. Second, remove any water from the salad, after it has chilled for around 20 minutes. Place and store in a separate container.

Ingredients 

  • 2 English cucumbers, also known as seedless cucumbers, thinly sliced
  • ½ large red onion, thinly sliced
  • 3 ½ tbsp apple cider vinegar, or white vine vinegar
  • 2 tsp granulated sugar
  • ½ to 1 tsp sea salt, to taste
  • dill, optional, for serving

Instructions 

  • Gather all ingredients, thinly slicing cucumbers and onions if you haven't already.
  • In a large mixing bowl, combine sliced cucumbers with red onion, vinegar, granulated sugar and salt. Toss cucumber salad, then place in the refrigerator to chill for at least 20 minutes.

    I have made This for years. I also have a big bowl, ham salad with horseradish celery, sweet pickle relish perfect for lake trip for lunchโ€ฆ.when it is a 110.
