Guys…We’re having a terrible heat wave, here in Spain. Temperatures are soaring (over 100°F/38°C), and all I want is fresh food. I’ve been snacking on frozen banana snickers and blueberry yogurt clusters for a while now. So, why not trying something different?
These banana pb bites will become your favorite treat this summer. Naturally sweet and so satisfying, they’re perfect as an afternoon pick-me-up, a post workout snack, or a late-night dessert. They’re also a great way to make your kids eat fruit!
Are banana bites healthy?
Great news, yes! They taste like ice cream, but are surprisingly healthy: vegan, gluten-free, and added sugar-free. A frozen banana bite has just 85 calories.
Reading the ingredient list, you may doubt so. Bananas have a bad rap, not to mention peanut butter and chocolate. But for no reason. As a certified nutrition coach, here’s what I have to say:
- Bananas – They’re a great source of vitamins and minerals, like potassium. Indeed they contain sugars, but they are natural sugars. Our brain and body need carbs to stay alive.
- Peanut butter – It’s rich in fibers, healthy fats and plant protein. The key is choosing natural peanut butter, without added sugar and oil.
- Dark chocolate – Dark chocolate with high cocoa percentages contains antioxidants and minerals. Just choose sugar-free or low sugar options.
Ingredients
You’ll need 3 main ingredients. Here are the details and substitutes, you can find precise quantities in the recipe card at the bottom.
- Bananas – Choose 2 medium, yellow bananas. They should be ripe just enough for sweetness. But not too ripe, or they’ll be too soft.
- Peanut butter – Use natural peanut butter: creamy or crunchy, lightly salted or unsalted. If you prefer, replace with almond butter, cashew butter, or sunflower seed butter. PB2 or PBFit are low fat alternatives.
- Chocolate chips – I recommend extra dark chocolate chips, with no added sugar if possible. But any type works.
- Coconut oil – This helps the chocolate melt better and faster. Swap for butter, if desired.
PB2 banana bites
Looking for a lower calorie option? Try making these banana bites with PB2 or PBFit. The ratio powdered peanut butter to water is 2 tbsp powder to 1 tbsp water. So, for this recipe you’ll need about ½ cup powdered peanut butter and ¼ cup water.
How to make banana bites with peanut butter
Step 1 – Slice bananas. Peel and slice the bananas into 1/2-inch (1.25 cm) thick rounds. You should get about 10-12 slices each, depending on their size. Line half of the banana slices on a plate or baking sheet covered with parchment paper.
Step 2 – Add peanut butter. Spread a layer of peanut butter over each slice, then top with another banana disc to form a sandwich.
Step 3 – Freeze. Freeze for at least 30 minutes, before coating with chocolate.
Step 4 – Melt chocolate. Place your dark chocolate chips in a microwave-safe bowl with 1 teaspoon of coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate has melted completely.
Step 5 – Dip in chocolate. With the help a fork (or two), dip each peanut butter sandwich into the melted chocolate. Transfer the bites back to the plate or baking sheet, then sprinkle with flaky salt if desired.
Step 6 – Freeze. Freeze for about 30 minutes, until the chocolate has hardened completely.
Storage directions
After dipping, freeze the pb bites for at least 30 minutes to allow the chocolate to harden.
Once they are frozen, place them into an airtight container and freeze. They will last for up to 2 months. When you’re ready to serve, take one or two out from the freezer and enjoy immediately.
The bananas won’t turn black in the freezer, because they freeze quickly.

- Serve, or keep in an airtight food container in the freezer for up to 2 months.
