I eat over 3 cups of yogurt everyday. As a post-workout, I usually mix Greek yogurt and protein powder for a refreshing protein boost. Now that summer’s coming, I snack on my homemade protein ice cream, frozen yogurt, or my chocolate protein pudding.

We’re experiencing a heat wave here in Spain. Looking for alternatives to my homemade protein bars, I turned a pint of yogurt into these strawberry Greek yogurt bars. They’re my new snack obsession!

Ingredients in frozen yogurt – Frozen Greek yogurt, maple syrup or honey and strawberries
  • Greek yogurt – Use full fat Greek yogurt, plain and unsweetened. Nonfat Greek yogurt does not work. It gets icy and your bars won’t set. You can replace it with dairy-free alternatives like Greek-style soy yogurt. Whatever your choice, it must be thick and high in fats.
  • Honey – It adds natural sweetness with no refined sugars or artificial sweeteners. Swap it for maple syrup, agave, or keto options like monk fruit or stevia.
  • Vanilla extract – Optional for enhancing the flavors. Skip if using vanilla flavored yogurt.
  • Mix-ins – Customize the bars with mix-ins and toppings. My recommendations are diced strawberries, blueberries, sliced banana, chocolate chips, chopped walnuts, and peanut butter.

Dietary adaptations

  • Dairy-free – Swap dairy for nondairy Greek yogurt. It must have a thick consistency and a high fat percentage, or the bars won’t set.
  • Vegan – Use plant based Greek yogurt and sweeten with maple syrup or agave.
  • Higher in protein – Mix in a scoop of protein powder. My favorite is vanilla whey protein powder.
  • Keto – Replace yogurt with whipped cottage cheese or nondairy Greek yogurt. As a sweetener, choose monk fruit, stevia or erythritol.

How to make frozen yogurt bars

  1. Combine ingredients. In a large mixing bowl, combine Greek yogurt with honey and vanilla extract. Add diced strawberries, blueberries, or your favorite mix-ins.
  2. Mix. Using a spatula or fork, mix Greek yogurt until smoothly combined. Taste and adjust with more honey, if necessary.
  3. Prep for freezing. Transfer the Greek yogurt mixture to a loaf pan lined with parchment paper. Using a spatula or spoon, smooth it out evenly.
  4. Add toppings. Top with sliced strawberries, blueberries, or your favorite toppings.
  5. Freeze. Cover the pan with a piece of parchment paper or plastic wrap to prevent freezer burns. Freeze for 2 hours, then remove from the freezer and let it on the counter for 10 minutes.
  6. Slice. Use a sharp knife to slice even bars. Wrap each piece individually with parchment paper, then place in zipper bags.
  7. Store. Freeze Greek yogurt bars for up to 3 months. Before serving, remove the desired amount from the freezer and let thaw for 5 minutes at room temperature.

Greek yogurt bars flavors

  • Mixed berries – Stir in ½ cup (75g) diced strawberries and ½ cup (75g) blueberries. Top with sliced strawberries before freezing.
  • Vanilla – Add 1 tsp of vanilla extract, or use vanilla flavored Greek yogurt. I recommend sugar-free options like Chobani or Fage.
  • Chocolate chip – Mix in 2 tbsp of creamy peanut butter and 4 tbsp of chocolate chips. To keeps sugars low, use dark chocolate or keto options.
  • Peanut butter – Stir Greek yogurt with 2 tbsp of peanut butter. For added texture, add 4 tbsp of chopped peanuts.
  • Mint chocolate chip – Swap vanilla for mint extract. Stir in 4 tbsp of chocolate chips, preferably dark or sugar-free.
  • Chocolate fudge – Add 3 tbsp of unsweetened cocoa powder and 4 tbsp of dark chocolate chips.
  • Nutella – Stir Greek yogurt with 3 tbsp of unsweetened cocoa powder plus 3 tbsp of hazelnut butter. I wouldn’t use Nutella, your bars won’t be as healthy.
  • Cookie dough – Mix in 3 tbsp of peanut butter along with 4 tbsp of chocolate chips (dark or sugar-free).
  • Birthday cake – Add 1 tsp of vanilla extract and 2 tbsp of (sugar-free) sprinkles. If available, add a scoop of birthday cake protein powder.

Matteo’s tips

  • Use full fat Greek yogurt – Little fat is necessary. It adds richness and ensures your Greek yogurt bars set properly. Nonfat Greek yogurt would get icy and form ice burns.
  • Use a thick Greek yogurt – It must be thick and creamy to freeze into sliceable bars. If dairy-free, choose plant based alternatives with a similar consistency. I recommend Greek-style soy yogurt or coconut cream.
  • Adjust sweetness to taste – After mixing, taste and adjust the yogurt. Add an extra touch of maple syrup or honey if necessary.
  • Slice before storing – Freeze for 2-3 hours or until set, then cut into bars and freeze again. This allows for easier slicing. The longer they freeze, the harder cutting will be.
  • Let thaw before eating – Before serving, remove the desired amount from freezer. Place the frozen yogurt bars in a plate and let thaw at room temperature for about 5 minutes.

Storage directions

After slicing, wrap Greek yogurt bars individually in parchment paper. Place in zipper bags or into an airtight freezer safe container and freeze for up to 3 months. Let thaw at room temperature for about 5 minutes before serving.

Can I add protein powder?

Yes, you can mix Greek yogurt with 1 scoop of protein powder. For the best result, I recommend whey protein — vanilla flavor is my favorite.

Can I use 0% fat Greek yogurt?

No, you’ll need full fat Greek yogurt. Fat free yogurt can easily get icy, resulting in ice blocks rather than delicious bars.

Are frozen yogurt bars good for weight loss?

Absolutely! My recipe is low in calories and high in protein (90 calories and 7 g protein per piece). When losing weight, protein helps you stay full and satisfied without cravings. It can also boost your metabolism.
