This super chocolatey low calorie brownie calls for the following ingredients:

  • Protein powder
  • Oat flour
  • Cocoa powder
  • Granulated sweetener

To keep my protein brownie skillet sugar-free I made this recipe with erythritol. You are free to replace with any granulated sweetener you prefer or swap it out for coconut sugar. I discourage the use of liquid sweeteners, such as maple syrup or honey.

This low calorie protein brownie recipe uses whey protein powder.

Whey is probably the best protein powder for this dessert because it mixes very well without lumps. On the contrary, casein or vegan protein powders absorb much more moisture and you’ll probably need to fix the dough with a bit of milk.

As far as the flavor is concerned, my recommendations are: vanilla, chocolate, brownie, salted caramel or peanut butter flavored protein powders. Also unflavored protein powder is perfect, but you will probably need some more sweetener to fix the taste.

How to make macro-friendly brownie skillet

In a bowl stir together Greek yogurt, cocoa powder, granulated sweetener, coffee powder and pinch salt. Mix well until all is combined and you get a smooth mixture.

Stir in protein powder, oat flour, baking powder and mix until combined – if you make this brownie with vegan protein powder or casein you may need to fix the dough with 1 to 2 teaspoons of milk.

Transfer the protein brownie batter to a greased skillet or ramekin and top with chocolate chips.

Bake in hot oven for 10 to 12 minutes at 180ºC (360ºF) or air fry for 8 to 10 minutes at 160ºC (320ºF). Serve warm and top with (sugar-free) vanilla ice cream if you want.

Although it will come out better in the oven or air fryer, you can also make this protein brownie skillet in the microwave. All you have to do is microwaving your protein dessert on high for 1 minute and 30 seconds to 2 minutes. But keep in mind that your brownie won’t be as fudgy.

  • 20 grams (3 tbsp) protein powder, whey protein powder
  • 15 grams (2 tbsp) oat flour, (or any flour)
  • 15 grams (2 tbsp) cocoa powder
  • 10 grams (1 tbsp) granulated sweetener, (erythritol)
  • 1/2 tsp baking powder
  • 1/4 tsp coffee powder
  • pinch of salt, (optional)
  • 1 tsp chocolate chips
