Why you should make low carb cereal at home?
One thing about me: I love cereals. I need to have them at least once a day or I’m not happy. This holds true for any occasion. Whether it’s summer or winter, for breakfast or as a snack, at home or on vacation.
It was actually during my stay in Chicago that I came across the best keto protein cereals ever tried (until then). Oh my gosh, they were so good that I couldn’t help myself eating an entire box per day. Everyday, for the whole duration of my trip in the States. But as good as it was, that low carb granola was also insanely expensive. 10 $ per unit. What?! Besides that, they were full of artificial ingredients, salt and oils.
Looking for a more affordable, healthier alternative, I challenged myself and made my own vegan keto cereals at home. It was love at first bite. Ever since then, I’ve been making my own breakfast cereal every week. And believe me, you should too, because these homemade low carb cereals are:

The ingredients in keto cereal
Eggless keto cereal. This recipe only calls for four simple ingredients that you probably already have at home. No egg, no dairy, no sugar! Read further for the ingredient list with additional details and substitution options.
- Almond flour: In this recipe, almond flour replaces grain-based flours while keeping the carbs down. You can purchase it from the store or make your own at home by placing nuts into a food processor and blend until powder. Almond flour can be substituted with your favorite nut flour or sunflower seed flour.
- Cocoa powder: Be sure to opt for unsweetened cocoa powder because it does not contain added sugar and therefore carbs. As an alternative you might also consider using cocoa powder sweetened with zero calorie alternatives, but in general I recommend sticking to unsweetened products.
- Keto granular sweetener: My sweetener of choice is erythritol. It substitutes sugar 1:1 and, as it has no aftertaste, it does not alter the flavor of your cereal. Nevertheless, any other low carb granular sweetener works. But be careful, because it may change the taste if too strong. To be sure, prefer erythritol, xylitol, monk fruit sweetener or allulose - I do not recommend stevia.
- Nut butter: For this eggless cereal recipe you'll need a creamy nut butter of your choice, preferably without added sugar or oil. I like almond butter, but you can easily replace it with peanut butter, cashew butter, pistachio butter or sunflower seed butter.
How to replace cocoa powder?
In case you are looking for a more simple cereal recipe or do not like chocolate, keep on reading. You can replace cocoa powder with the same amount of almond flour. Or protein powder if desired (read further for more details). This means that you'll need to add 30 grams (or ¼ cup) of almond flour more.
High protein keto cereal recipe
Did you know that you can make your own protein cereal at home..? With simple ingredients, budget-friendly and healthier. All you should do is following this recipe with a couple of twists, and you'll soon end up with a breakfast cereal that fits your macros. Here you've got two alternatives. Either substituting part of almond flour with protein powder or using it as an alternative to cocoa powder.
- Replace almond flour with protein powder. If you go for the first option, making low carb protein cereal is as simple as swapping out 30 grams (⅓ cup) of almond flour with your preferred protein powder.
- Replace cocoa powder with protein powder. If, instead, you prefer this alternative, just swap out the cocoa for a protein powder of your choice.
As it mixes significantly better, I recommend whey protein powder. But also vegan alternatives or casein are suitable. Just keep in mind that in these cases the cereal dough may require more nut butter. Speaking of flavor, my suggestions are vanilla and chocolate. Chocolate protein powder is particularly great if you decide to use it instead of cocoa powder: same chocolaty taste, better macros!
Recipe variations
With just almond flour, cocoa powder, nut butter and sweetener, this is a very simple keto cookie recipe. However, you should not let simplicity limit your creativity. From chocolate chips to cinnamon, the ways how you can customize your cereals are endless. Here are four variations for you to try!
- Cookie dough: Replace cocoa powder with more almond flour and add a handful of sugar-free chocolate chips to the dough.
- Peanut butter: As simple as that, make sure to use peanut butter when preparing the dough. You can decide whether to keep the cocoa or substitute it with more almond flour or protein powder.
- Chocolate crunch: Stir in a handful of dark chocolate chips without sugar for better taste and a crunchy experience.
- Cinnamon crunch: Level up the taste profile of your cereals by adding some ground cinnamon to the ingredient list. In this case, I highly recommend swapping out the cocoa powder for more almond flour.
How to make keto cereals with almond flour
- Mix the ingredients. In a large mixing bowl, combine all the dry ingredients together: almond flour, keto granulated sweetener and cocoa powder. Give it a quick stir to combine the powders, then stir in your nut butter.
- Make the low carb dough. Stir well until you get a soft dough, first with a fork and then using your hands. If after mixing the dough is still too dry, add some more nut butter, or adjust with more almond flour if it is too sticky. This depends on the creaminess of the nut butter you use.
- Form the cereals. Using your hands, shape some small balls then place onto a lined baking sheet.
- Bake. Bake in hot oven for 10 to 12 minutes, making sure you do not overbake them. When they are ready, remove your keto cereals from the oven and let cool before serving.
How to store homemade cereals?
First thing first, let them cool completely at room temperature. My tip is to leave the hot cereals in the baking tray as soon as you take them out of the oven. Once they have cooled, you can proceed further.
Store homemade keto cereals in an airtight container or jar to preserve freshness and prevent moisture absorption. Make sure you use glass or plastic containers with tight-sealing lids, and store them in a cool, dark place away from direct sunlight. They will last for up to 5 days. To store them for longer, place in zipper bags and freeze for up to 3 months.
Serving ideas
If you are like me and can't resist cereal, you probably don't need any ideas. I already see you eating your homemade cereal right from the jar. But in case you want to try something new or if you are still looking for inspiration, keep reading. In the following lines I am going to give you some of my favorite ways how to eat cereal. Low carb, high protein and infallibly delicious!
- Breakfast bowl: Add to a bowl and serve with unsweetened milk or low carb yogurt and some berries. For more protein and nutrients I recommend Greek yogurt.
- Smoothie bowl: Sprinkle on top of your favorite smoothie bowl to add texture, crunch, and extra flavor. Chef tip, try it with my chocolate protein smoothie!
- Parfait cup: Create layers of cereals, low carb yogurt (Greek yogurt), and some extras like nuts, seeds or dark chocolate chip. Repeat the layers until your container is filled.
- Trail Mix: Enjoy your vegan keto cereals with a handful or nuts and seeds for a nutrient-rich snack.

Ingredients
