Here is a list of all ingredients that you should have to make this low calorie and high protein brownie in a mug:

  • Greek yogurt: this recipe uses nonfat Greek yogurt, but you can replace with full-fat Greek Yogurt. For a vegan mug cake, use dairy-free Greek yogurt or coconut yogurt. 
  • Protein powder: this flourless brownie mug cake recipe uses whey protein powder, but you can replace it with plant based protein powder or casein (with some adaptations, more on this later). In terms of flavor, I like vanilla but also chocolate or brownie will taste great.
  • Granular sweetener: for a low calorie protein brownie in a mug, this recipe uses sugar-free and calorie-free granular sweetener (erythritol, to be precise). Feel free to replace with coconut sugar, brown sugar or any other granular sweetener of your choice.
  • Cocoa powder: this flourless protein brownie mug cake is made with natural cocoa powder, free from added sugars.
  • Water or milk: as it is only 1 tablespoon, you can make this recipe with either water or milk (also dairy-free if you wish).

If you want to make keto protein brownie mug cake with casein or vegan protein powder, instead, your recipe may require some more milk or water. All you have to do is adding more liquid to the brownie batter until it gets smooth. And if you mess up with too much water, adjust with more protein powder or cocoa powder.

In terms of flavor, I like preparing this flourless protein brownie mug cake with vanilla protein powder. But feel free to use your favorite flavor: chocolate, brownie, salted caramel, peanut butter or even unflavored. If you opt for unflavored protein powder, however, this recipe may require some more sweetener to fix the taste.

How to make protein brownie mug cake

In a microwave safe mug, stir the Greek yogurt with protein powder, cocoa powder, granular sweetener and water (or milk). Mix well, until all ingredients are combined and the brownie batter has become smooth – adding more water or milk if it is necessary. This depends on the type of protein powder that you use, as casein and vegan protein tend to absorb more liquid.

Once your keto flourless brownie batter is ready, optionally top with chocolate chips and microwave on high for 30 seconds to 1 minute. Or bake in hot oven at 180°C (350°F) for around 10 minutes, if you prefer. But make sure that you do not overcook or over-bake the brownie otherwise it will get dry!

If you don’t have a microwave or prefer baking, you can easily make this flourless protein mug cake in the oven. For this, preheat the oven to 180ºC (360ºF) and, when hot, bake for about 10 minutes.

Tips for the best flourless brownie mug cake

Here are a couple of tips and tricks that will bring your keto flourless brownie mug cake to the next level!

  • Make sure that you prepare this recipe with Greek yogurt or a thick yogurt of your choice. Yogurts with a smooth texture, instead, are not recommended.
  • Use a granular sweetener of your choice. Do not replace with a liquid sweetener otherwise the consistency of the brownie batter won’t be the same.
  • Stir into the batter a pinch of salt and a hint of coffee powder. They will enhance the flavors and make your brownie irresistibly delicious!
  • Before microwaving or baking, top with some chocolate chips if you want. Chocolate makes everything better!
