For just 126 calories, this cheesecake is perfect as a healthy snack or dessert to enjoy whenever you want. Also if you have no time to cook!

Ingredients for single serve cheesecake

Four simple ingredients and 2 minutes is all it takes to make a healthy microwave cheesecake for one. No need for sugar or gelatin!

Here is all this single serve cheesecake recipe calls for.

  • Cream cheese: this recipe uses low fat cream cheese, but you can also replace with full fat cream cheese.
  • Egg: for the best taste and texture, use a fresh egg.
  • Granular sweetener: for a sugar-free microwave cheesecake, this recipe uses erythritol. You can replace with any granular sweetener of your choice (such as xylitol), with coconut sugar or brown sugar (but it won’t be sugar-free anymore).
  • Vanilla extract: this adds flavor to the microwave cheesecake.

As a topping, feel free to pick and choose your favorite fruit. I like serving my healthy microwave cheesecake with fresh blueberries. But also strawberries, raspberries or mango are great options.

How to make cheesecake in the microwave

Second, you’ll need to soften the cream cheese for around 15 seconds in the microwave. This will make it easier for you to whisk the mixture.

After softening it, combine the cream cheese with the egg, the granular sweetener and the vanilla extract. Whisk all ingredients together until smooth, this may take one to two minutes.

  • 80 grams (1/3 cup) cream cheese (low fat)
  • 1 egg
  • 1 1/2 tbsp granular sweetener (erythritol)
  • 1/3 tsp vanilla extract

Instructions 

  • Grease a 9 cm (3.5 inches) ramekin so that the cheesecake won’t stick.
  • Add cream cheese to the ramekin and soften in the microwave for 10 to 15 seconds.
  • Combine cream cheese with egg, granular sweetener and vanilla extract. Whisk all ingredients together until smooth.
  • Microwave cheesecake for 2 minutes in total – stop the microwave after 1 minute, then restart and keep cooking in 30 second intervals. Let the healthy cheesecake cool for at least 15 minutes, then remove from the ramekin and serve.
