Healthy Microwave Cheesecake for One

Ingredients

  • 80 grams (1/3 cup) cream cheese (low fat)
  • 1 egg
  • 1 1/2 tbsp granular sweetener (erythritol)
  • 1/3 tsp vanilla extract

To Serve

  • blueberries (optional)

Instructions

  • Grease a 9 cm (3.5 inches) ramekin so that the cheesecake won't stick.
  • Add cream cheese to the ramekin and soften in the microwave for 10 to 15 seconds.
  • Combine cream cheese with egg, granular sweetener and vanilla extract. Whisk all ingredients together until smooth.
  • Microwave cheesecake for 2 minutes in total - stop the microwave after 1 minute, then restart and keep cooking in 30 second intervals. Let the healthy cheesecake cool for at least 15 minutes, then remove from the ramekin and serve.
