- 80 grams (1/3 cup) cream cheese (low fat)
- 1 egg
- 1 1/2 tbsp granular sweetener (erythritol)
- 1/3 tsp vanilla extract
Grease a 9 cm (3.5 inches) ramekin so that the cheesecake won't stick.
Add cream cheese to the ramekin and soften in the microwave for 10 to 15 seconds.
Combine cream cheese with egg, granular sweetener and vanilla extract. Whisk all ingredients together until smooth.
Microwave cheesecake for 2 minutes in total - stop the microwave after 1 minute, then restart and keep cooking in 30 second intervals. Let the healthy cheesecake cool for at least 15 minutes, then remove from the ramekin and serve.
