- Salmon. Out of convenience, I made these patties with can salmon. I like this option because the fish already comes cooked, skinless and lightly seasoned. You can use fresh fillets, but you will have to cook them ahead.
- Egg. A large fresh egg helps the ingredients combine and bind the mixture while adding more taste. As an alternative you may replace with half mashed potato more, but I generally do not recommend it.
- Potatoes. The addition of potatoes makes this salmon patties recipe healthier because they partly replace breadcrumbs and refined flour. The potato mash helps bind the dough while making these nuggets tender and softer. If desired you can also use sweet potatoes.
- Breadcrumbs. To make these can salmon patties healthy, this recipe replaces common breading with whole-wheat breadcrumbs. Feel free to replace with regular breadcrumbs or panko crumbs.
- Seasonings. This simple recipe only calls for onion powder and garlic powder. As I used can salmon which is already quite flavorsome, no extra salt was required. But you may think of adding some in case you use fresh salmon fillets or if you want your nuggets to be more savory.
How to make salmon patties healthy
Step 1 - Prepare and gather all ingredients. Peel and boil the potato in salted water until it is tender. Once ready, transfer to a bowl and let cool. Once cooled, mash it very well. In the meanwhile, drain can salmon, or cook the fresh fillets.
Step 2 - Mix all ingredients into a dough. Start by adding to a large mixing bowl salmon, mashed potato, egg, 3 tablespoons of whole-wheat breadcrumbs, onion powder and garlic powder. Using a fork, mix the ingredients to get a well-combined salmon mixture. In case that your dough is too wet, adjust with more breadcrumbs. This depends on the size of the potato you used.

How to cook, bake and air-fry salmon patties?
- In the oven or in the air fryer. Drizzle with olive oil and bake in hot oven (200°C/ 400°F) or air fryer for 12 to 18 minutes until golden, flipping halfway through.
- In a skillet, pan fried. Heat a large skillet over medium heat with a bit of oil to prevent sticking. When hot, add the salmon patties and pan fry for about 8 to 10 minutes, until they are cooked through.
Storage information and meal prepping
Homemade salmon nuggets taste delicious straight from the oven (or pan or air fryer) or in the next days. This makes the dish great for meal prepping! Before storing, be sure you let the patties cool completely at room temperature.
- In the fridge. Once they have cooled, transfer to an airtight container and refrigerate for a maximum of 3 days.
- In the freezer. For a longer storage, let cool and freeze in a freezer-safe container or zipping bags for up to 2 months. Before consuming, thaw them in the refrigerator overnight or reheat directly in the oven (or air fryer) until warm and crispy.

- Use high quality salmon. For more taste and nutrients, I highly suggest choosing fish with high quality. And if you have more time, use fresh salmon fillets, cooked at home right before preparing the patties.
- Include additional seasonings. Experiment with fresh herbs like parsley, dill, or cilantro, and use spices such as garlic powder, paprika, or cayenne pepper for a kick. You should also consider adding some salt in case you are using fresh fillets instead of can salmon.
- Bread the nuggets before cooking. This step is optional, but you may consider coating your salmon cakes in more breadcrumbs right before cooking. The breading will make your nuggets even crispier and tastier.
