- Oat flour: Both store-bought and homemade oat flours work, gluten-free if it is necessary.
- Almond flour: Made from ground nuts, the almond flour adds a nutty flavor and provides a good amount of plant based protein, healthy fats, fiber and nutrients to the cookie cake.
- Nut butter: This recipe requires a creamy nut butter of your choice, preferably without added sugars. I used smooth peanut butter but also almond butter, cashew butter or sunflower seed butter work.
- Maple syrup: The maple syrup acts as sweetener while providing additional health benefits.
- Baking powder: Baking powder acts as a leavening agent, helping the dessert rise and become fluffy.
- Vanilla extract and salt: These two ingredients enhance the flavor profile of the vegan cookie cake.
- Milk of choice: Milk is added to provide moisture and create a batter-like consistency. You can use any type of milk, such as cow’s milk, unsweetened almond milk, soy milk, oat milk or any other dairy-free milk.

The substitutes
- Replace the applesauce with half mashed banana or one whole egg.
- Substitute oat flour with whole wheat flour, spelt flour or all purpose flour.

- Opt for 1 tablespoon of vegetable oil or melted butter instead of nut butter. Or use sunflower seed butter, if you are allergic to nuts.
- Replace maple syrup with any other sweetener, such as honey, agave syrup, date syrup, brown sugar or coconut sugar. Also calorie-free sweeteners such as erythritol work, but they may slightly change the mug cake taste.
How to make chocolate chip mug cake
In a microwave-safe mug, combine the applesauce with nut butter, maple syrup and vanilla extract. Whisk until smooth. Once smooth, add all dry ingredients: oat flour, almond flour, baking powder and a pinch salt. Spoon in 2 tablespoon milk and stir until combined. Finally, fold the chocolate chips into the mug cake batter.
Place the mug in the microwave and cook on high for approximately 1 minute, or until the cake has risen and is set in the center. Microwaves may vary, so total time may change accordingly.
Carefully remove the mug from the microwave (it will be hot!) and allow the cookie cake to cool for a minute or two before serving.
Oven-baked mug cake
If you don’t have or don’t want to use a microwave, you can make this healthy mug cake with chocolate chips in the oven. Place the batter in an oven-safe ramekin and bake in hot oven at 180°C (350°F) for 12 to 20 minutes.

FAQ - Cookie mug cake
For the best result, be sure to make this single serve cake in the right mug, with a proper size. Your microwave-safe mug should have a capacity of about 8-ounce (250 ml). If it is too small, the cake will overflow. If it is too big, instead, it will turn out dry.
Indeed! To make a protein cookie mug cake replace part of the flours with protein powder. My recommendation is to opt for vegan protein powder or casein. Although also whey works, I prefer the previous two options because they do not dry out when heated.
If you don't like it, you can substitute the nut butter with one tablespoon of vegetable oil or melted butter. And if nuts are the problem (allergy), opt for sunflower seed butter or tahini.
For a gluten-free recipe, use certified gluten-free oat flour, almond flour or any other GF flour.
