Simple as it is, you will be surprised by how moist and delicious this banana mug cake is. The secret for the ultimate microwave banana cake is replacing milk with yogurt because it will give your dessert a ridiculously moist texture. 

This recipe only uses three simple and wholesome ingredients that you probably already have at home. You will need no oil, butter, nut butter, sugars or baking powder because this is the easiest microwave cake ever! Read further and you will learn all about the ingredients and their substitutes.

FAQ – Banana mug cake

Can I make this mug cake high protein?

Yes, as an alternative you can also make high protein banana mug cake if you replace part of the oat flour with protein powder. My suggestion is to use 15 grams (2 tbsp) oat flour and 15 grams (2 tbsp) vegan protein powder. I do not recommend making this healthy mug cake with Whey protein powder because, when microwaved, they will make your dessert dry.

Which banana should I use?

For this healthy banana mug cake recipe you should use half ripe banana. Here is how to recognize if your banana is ripe enough: check its peel. If it comes with brown spots all over its skin – or if it is brown – it means that your banana is ripe enough. If your banana hasn’t ripen yet, you can also make this recipe with half yellow banana. But keep in mind that you may want to add 1 tsp maple syrup or honey because your mug cake will be a bit less sweet.

How can I replace oat flour?

You can replace oat flour with any flour of choice. To keep this banana mug cake refined flour-free I recommend using Teff flour, spelt flour or wholewheat flour. However, also all purposes flour will work.

And if you want to make a low carb banana mug cake, try making this recipe with almond flour, peanut flour or a mix of almond flour and coconut flour. I do not recommend using only coconut flour otherwise your microwave mug cake will turn out a way toodry.

Which yogurt should I use?

For this banana mug cake recipe you should use a smooth yogurt. Great options are soy yogurt, almond yogurt, traditional yogurt (also low-fat) or probiotic yogurt – I used unsweetened soy yogurt.

If you want to use Greek yogurt, this recipe will probably need the following change. In addition to the 50 grams (3 tbsp) of Greek yogurt, pour in a couple teaspoons of milk to consistency.

Can I add extra ingredients?

Yes, you can make this simple mug cake even more delicious by adding some extra ingredients. My recommendations are dark chocolate chips, walnuts, 1 teaspoon nut butter or 1 teaspoon chocolate spread – like Nutella (try my low calorie Nutella!). Or try adding 1/3 tsp vanilla extract. It will make your banana cake even more delicious!

Can I make this banana mug cake in the oven?

Yes, you can bake this banana mug cake in hot oven at 180 Cº (350 Fº) for 10 to 15 minutes. However, make sure that you are baking your mug cake in an ovenproof mini bowl.

Ingredients 

  • 1/2 banana
  • 30 grams (1/3 cup) oat flour
  • 50 grams (3 tbsp) yogurt of choice (smooth)

Topping (optional)

  • 1 tsp chocolate chips

Instructions 

  • In a mixing bowl mash banana and combine with oat flour and yogurt of choice. Stir to combine – add 1 tsp milk of choice only if the batter is too thick (this depends on the texture of the yogurt you utilize).
  • Spray a microwaveable mug with cooking spray – or grease with oil – and fill 2/3 mug with banana bread cake oat batter.
  • Microwave on high for about 1 minute to 2 minutes.
