Chocolate Chip Mug Cake

Equipment

Ingredients

  • 3 tbsp (45 grams) unsweetened applesauce or mashed banana
  • 1 tbsp nut butter peanut butter, almond butter or preferred nut butter
  • 1 tbsp maple syrup or honey
  • 1/3 tsp vanilla extract optional
  • 2 tbsp oat flour or all purpose flour
  • 2 tbsp almond flour or more oat flour, all purpose flour
  • tsp baking powder
  • a pinch of salt
  • 2 tbsp milk of choice
  • 1 tbsp chocolate chips

Instructions

  • In a microwave-safe mug, combine applesauce, nut butter, maple syrup and vanilla extract. Whisk until smooth.
  • Once smooth, add oat flour, almond flour, baking powder, a pinch of salt and milk. Stir until combined; then fold a tablespoon chocolate chips into the mug cake batter.
  • Place the mug in the microwave and cook on high for approximately 1 minute, or until the cake has risen and is set in the center. Microwaves may vary, so adjust the cooking time accordingly.
  • Carefully remove the mug from the microwave (it will be hot!) and allow the cake to cool for a minute or two before serving.

Oven-baked Chocolate Chip Mug Cake

  • Follow the same instructions as above but bake in hot oven at 180°C (360°F) for 12 to 20 minutes.
