This single serve peanut butter cookie crowns my 3 ingredient dessert recipe series. Starting with the viral flourless brownies, I went on to make 3 ingredient chocolate mug cake, 3 ingredient cookie dough, 3 ingredient chocolate protein mousse and so on. I was just missing a 3 ingredient peanut butter cookie, but not anymore.

A 3 ingredient peanut butter cookie for one: you only need flour, peanut butter and maple syrup. Oh and let’s not forget some chocolate chips on top. Indeed this is a fourth (optional) ingredient. But correct me if I’m wrong, there is nothing better than a chocolate chip peanut butter cookie!

Although it is very simple, make sure you keep on reading. In the next lines you are going to learn all details and tips on the 3 ingredients alongside their substitutes. Are you ready? Here is all you need to make a peanut butter cookie for one.

Peanut butter. For the best result, I recommend creamy peanut butter, slightly salted. The salt will balance the sweetness and bring about all the flavors, especially the peanut one. That’s why I suggest adding a pinch of salt to the dough in case you opt for unsalted peanut butter.

As this is a peanut butter cookie for one, this ingredient is an essential part of the recipe. Therefore, it should not be replaced. However, if you still want to make this cookie without, feel free to substitute it with any other nut butter. Great options are almond butter, cashew butter or sunflower seed butter.

Maple syrup. This single serve peanut butter recipe requires a liquid sweetener. As it is natural and more nutritious, my first choice is always maple syrup. If you don’t have or don’t like it, maple syrup can easily be replaced with honey, agave syrup or date syrup. On the contrary, this 3 ingredient peanut butter cookie recipe does not work with granular sweeteners such as confectionery sugar, brown sugar or coconut sugar.

Oat flour. Use homemade or store-bought oat flour, gluten-free if it is necessary. As an alternative, you may use any other flour, such as all purposes flour, spelt flour or almond flour. However, as different flours have different characteristics, you should keep in mind that the recipe may require some adaptations: add more flour if the dough is too wet or more nut butter if it is too crumbly.

Making oat flour at home is very quick and simple. All you need to do is adding rolled oats to a high speed blender and processing until the oats have become flour. Depending on the power of your blender, this process may require a couple of minutes. The result should be a finely grounded powder, just like flour!

If you want a single serve cookie that is high in protein, keep on reading because adapting this recipe in incredibly simple! All you have to do is replacing no more than 15 grams (or 1 tbsp) of the oat flour with protein powder and you’re set to bake. However, keep in mind that the use of protein powder may change the cookie dough consistency. Adjust with more flour if the dough is sticky or fix with more nut butter if it is too dry.

This single serve peanut butter cookie recipe is incredibly simple. All you have to do is combining the oat flour with peanut butter and maple syrup. Stir and then knead the 3 ingredient dough until it gets soft. Once it is ready, shape one peanut butter cookie and decorate with some chocolate chips, if you desire. Bake in hot oven for 8 to 12 minutes and enjoy!

  • Preheat oven to 180°C (360ºF).
  • In a bowl, combine the oat flour together with peanut butter and maple syrup.
  • Knead the dough until soft, then shape one cookie and decorate with chocolate chips, if you desire.
  • Bake in hot oven for 8 to 12 minutes.

Notes

If you use unsalted peanut butter I recommend adding to the cookie dough a pinch of salt.
