I’m very picky with fruit. Picky in the literal sense, as I always spend a lot of time choosing the right fruit when grocery shopping. And the hardest ones to pick are probably bananas. I only like bananas if they are yellow, not green, not brown and also not too yellow. I categorically dislike the taste of ripe bananas, and even their smell makes me sick.
Last week Aldi had bananas on sale, so I got a couple more than usual. To avoid ending up with overripe fruits, I carefully picked a selection of green and yellow bananas. But unfortunately I didn’t manage to catch up with their ripening, so I ended up with two brown-ish bananas.
Not in the mood for banana bread or pancakes, I combined them with oats, egg and egg whites and baked these super simple protein banana cookies.
Recipe ingredients
The ingredients for making these protein banana cookies with egg whites are incredibly simple. You only need bananas, oats, eggs and egg whites. For more delicious cookies, you shouldn’t forget flavors and spices like vanilla, cinnamon and a pinch of salt.
Here is all this egg white banana cookie recipe calls for:
- Ripe bananas: the riper they are, the better. Look for brown-ish bananas, with dark spots all over their skin. If your bananas are still yellow, let them ripe before making this recipe.
- Oats: this recipe can be prepared with rolled oats (also known as “old-fashioned” oats), quick oats or a mix of both. However, for the best egg white protein cookies I recommend rolled oats.
- Egg: for the best taste and nutritional benefits I recommend using fresh eggs, from free range chicken if possible.
- Egg whites: for convenience I like using egg whites in brick. But if you can't find them, simply divide the egg whites and yolks, keeping the latter aside for other recipes.
- Ground cinnamon: a must for delicious banana egg white cookies.
- Salt: this enhances the tastes and balances the sweetness.
- Vanilla flavor: optional but recommended, vanilla flavor will add a delicious taste to your banana cookies.
Do I need any sweetener?
As this recipe uses ripe bananas, the egg whites cookies are going to be already sweet. However, if you have the sweet tooth, you should definitely add a couple tablespoons of your favorite sweetener. Honey, maple syrup, coconut sugar, erythritol or stevia all work.
Egg white cookies with protein powder
If you want to bake egg white banana cookies that are higher in protein, you can add to the cookie dough a scoop of protein powder. However, based on the type of protein powder you use, the dough may require some more milk if it is too thick.
Keep in mind that different types of protein powder behave differently when baking, and you may need to adapt the recipe accordingly. As a rule of thumb:
- Vegan protein powder and casein are more absorbent. Therefore your recipe will likely require a pour of milk (if it is too thick).
- Whey protein powder mixes very well and dissolves easily. Therefore you probably won’t even need the additional milk.
How to make banana protein cookies with egg whites
This egg white protein cookie recipe is so quick and simple that it comes together in a bowl. Here’s how!
In a large mixing bowl mash the bananas, then combine with the egg, egg whites, cinnamon, vanilla extract and salt. Using a whisk or fork, stir the wet mixture for a couple of minutes until all is well combined.
Add the rolled oats and optionally the protein powder. Using a spatula or fork stir all ingredients together. If you are using protein powder, the dough might need a pour of milk if it is too thick. Finally, fold in the chocolate chips.
Refrigerate the oatmeal protein cookie dough for at least 10 minutes. After cooling, when the dough has set, scoop out the dough and shape the cookies. Transfer the egg white protein cookies to parchment paper covered baking sheet, spacing cookies apart.
Bake in hot oven for 10 to 12 minutes and let cool over a baking rack.
