Wanting my recipe for deviled egg potato salad easy and healthy, I made this dish with just a handful of simple ingredients. Potatoes, eggs, Greek yogurt and mayo, you can find everything at the local grocery store. Although they are very simple, there are a couple of things you should know about the ingredients. Stick around for all details, tips and recommendations.
- Potatoes. For the best homemade deviled egg potato salad, you should use a potato variety that keeps its shape and texture without getting too soft. My two recommendations are Yukon gold and red potatoes.
- Eggs. Prefer fresh eggs, pasture-raised and organic if it is possible. These are the ones that have more taste and nutrients.
- Greek yogurt. The use of Greek yogurt makes this deviled egg potato salad recipe healthier, lower in calories and higher in protein. I like 2% Greek yogurt, you are free to choose regular or nonfat options. Dairy-free yogurt will also work, but it must have the same firm consistency.

- Yukon gold potatoes: These are my favorite because they hold their shape very well and have a buttery flavor, which perfectly pairs with the Greek yogurt dressing.
- Red potatoes: As they maintain shape and texture, these are also great. You can recognize them by a thin, red skin - which is going to give your dish an outstanding look!
How to make deviled eggs potato salad?
Boil potatoes and eggs. Dice the potatoes, then place in a large pot and boil in salted water until they are tender. Once they are ready, drain and let cool. In the meantime, hard-boil the eggs, let them cool, then dice into small cubes.
Prepare the salad. In a bowl, combine Greek yogurt with mayonnaise, Dijon mustard, chives, salt, and pepper. Taste and adjust with more seasonings to your own likings.
