I’m all about simple, delicious recipes, and these zero sugar muffins are no exception. Inspired by my viral sugar-free brownies and viral 3 ingredient brownies with banana, this recipe is perfect if you have the sweet tooth but want to eat healthier without all the sugars and calories of traditional desserts.

What’s so unique about these muffins? They’re completely flourless, sugar-free, and dairy-free. No nuts, no butter, no oil is needed, which makes them perfect for anyone on a low-calorie diet or following specific diets. Despite their simplicity, they’re packed with rich chocolate flavor and a wonderfully fluffy texture.

Best of all, they’re made with just apples, eggs, and cocoa powder! Yes, you heard that right—these muffins come together in minutes with minimal effort.

Why you will love this recipe

  • Quick and simple. Just three ingredients, a blender, and an oven are all you need to whip up these delightful treats with no sugar.
  • Perfect for any occasion. Enjoy these soft, chocolatey sugar free muffins for breakfast, as a midday snack, or as a post-dinner dessert. I usually have a couple with a protein shake after working out.

Ingredients

This recipe calls for apples, eggs, and cocoa powder—that’s it! Below, I’ll share some tips, substitutions, and optional add-ins to customize your muffins. Precise quantities can be found in the recipe card at the end.

  • Apples. Choose naturally sweet varieties like Fuji, Honeycrisp, or Gala for the best flavor. Peel, core, and dice them before blending. Alternatively, use two pears or bananas instead of apples.
  • Eggs. You’ll need two large eggs. They’re key to binding the ingredients and creating light, fluffy muffins with no sugar and no oil.
  • Cocoa powder. Stick to unsweetened cocoa powder to keep this recipe sugar-free. Dutch-process cocoa or cacao powder also works, but double-check for added sugars.

You will also need half a teaspoon of baking powder to ensure they get fluffier. Other optional mix-ins are 2–3 tablespoons of maple syrup to enhance sweetness, a dash of vanilla extract, cinnamon, dark chocolate chips, or chopped walnuts.

How to make sugar free muffins

Step 1 – Prep. Preheat your oven to 350°F (180°C) and prepare a muffin mold with muffin liners. Make sure you grease the liners well to prevent them from sticking.

Step 2 – Blend. Cut the apples into chunks, then add to a blender with eggs, cocoa powder and baking powder. Blend on high until smooth and free of lumps. Optionally, you can add 2 to 3 tablespoons of maple syrup for sweeter cupcakes.

Step 3 – Bake. Fill ⅔ of each muffin liner with the batter, sprinkle with chocolate chips if you want and bake in hot oven for 20 to 25 minutes. Make sure you do not overbake them; they are ready when a toothpick inserted into the center comes out clean.

Recipe tips

  • Pick the right apples. Naturally sweet apples like Fuji or Gala work best for this recipe, as they enhance the flavor of your muffins without added sugar.
  • Experiment with flavors. Add vanilla extract, cinnamon, or a dash of coffee powder to elevate the taste. You can also mix in dark chocolate chips, chopped nuts, or protein powder for extra texture and nutrition.
  • Use a blender. For the smoothest batter, make sure to blend the ingredients thoroughly. I used a high speed blender, but also a food processor works.

Storage directions

To store, allow the muffins to cool completely, then transfer them to an airtight container. They’ll keep at room temperature for up to 2 days or in the fridge for up to 4 days. For a longer storage, place in a freezer-safe bag or in a food container and freeze for up to 3 months. Thaw at room temperature or reheat in the oven at 350°F (180°C) for a few minutes before serving.

Frequently asked questions

Can I add protein powder?

Yes, absolutely. Making these sugar-free muffins high protein is as simple as adding to the ingredients a scoop of your favorite protein powder, right before you blend. I like and recommend both vanilla and chocolate flavored plant protein or casein – whey protein will give them a slightly dry texture.

Can I make sugar-free muffins with no eggs?

Yes, you can replace eggs with flax eggs or chia eggs to make this recipe vegan.

Are muffins without sugar healthy?

Absolutely! Since this recipe has no added sugar, no oil and no flour, not only they are healthy but they’re also low in calories (84 calorie each) and naturally gluten-free. For an extra punch of protein, add a scoop of your favorite protein powder – I like vanilla protein powder.

    1. Hey!
I haven’t tried it personally, but I think that about 220 g (1 cup) of unsweetened applesauce work as well. Just be sure that the applesauce used is not too liquid, it should have a rather thick texture.
Let me know in case you try ๐Ÿ˜‰
