Sugar Free Muffins
These chocolate Sugar Free Muffins are unbelievably moist and delicious. Made with 3 simple ingredients and no flour, they're healthy, low calorie, low fat and naturally gluten-free.

- 2 apples cored and peeled
- 2 large eggs
- ½ cup (50 g) cocoa powder
- ½ tsp baking powder
Optional Ingredients
- 2 to 3 tbsp maple syrup for sweeter muffins
- 1 tsp vanilla extract
- ⅙ tsp salt

Preheat oven to 350°F (180°C) and prepare a muffin mold with muffin liners. Make sure you grease the liners to prevent the muffins from sticking.
Cut the apples into chunks, then add to a blender with eggs, cocoa powder and baking powder. Blend on high until smooth and free of lumps. Optionally, you can add 2 to 3 tablespoons of maple syrup for sweeter muffins.
Fill ⅔ of each muffin liner with the batter, sprinkle with chocolate chips (optional) and bake in hot oven for 20 to 25 minutes. Make sure you do not overbake the muffins; they are ready when a toothpick inserted into the center comes out clean.
Let cool for at least 15 minutes before serving.
