This spinach crepes recipe is simple and nutritious. You only need a handful of healthy ingredients that you probably already have at home. But don’t worry if something is missing. Down below you will find a detailed list of ingredients alongside their substitutes.

Here is all you need to make savory crepes from scratch.

  • Egg: this ingredients is a must for soft crepes that taste good. For savory crepes that are higher in protein and lower in calories, you can replace a whole egg with 2 (about 60 ml) egg whites. However, the taste won’t be exactly the same. 
  • Egg whites: for high protein savory crepes that are also lower in calories, this recipe uses one egg in combination with two egg whites. As an alternative, you can replace the egg whites with one whole egg more.
  • Oat flour: to make healthy crepes that are also gluten-free, this recipe uses oat flour. As an alternative you can replace with spelt flour, wholewheat flour or all purposes flour.
  • Milk of choice: these spinach savory crepes can be prepared with any type of unsweetened milk, either dairy or dairy-free – soy, almond, oat, rice, pea or cashew milk, they are all great! As those are savory crepes, make sure that the milk is both unsweetened and unflavored.
  • Olive oil: use extra virgin olive oil for the best taste and nutrition. As a substitute, you are free to utilize any other type of oil or melted butter. My recommendations are avocado oil, walnut oil or pumpkin seed oil.
  • Salt and pepper: for the tastiest savory crepes, add as much salt and pepper as you like. Although you may also use other seasonings, my recommendation is to remain on the conservative side and stick to salt and pepper.

Here is all you need to make the spinach crepes filling.

  • Spinach: for the best result I recommend using fresh baby spinach.
  • Ricotta cheese or cream cheese: for this recipe both full-fat and low-fat cheeses work. As an option, you can also opt for dairy-free cream cheese.
  • Feta cheese: optional, but highly recommended for the best spinach crepes filling. As an alternative, replace feta with any type of cheese you like. Parmesan cheese and mozzarella are my favorite!
  • Salt, pepper and olive oil: these will make your creamy spinach filling irresistibly delicious!

How to make savory crepes with spinach

First, you will need to make the healthy savory crepes.

In a bowl whisk together the egg with egg whites (or one whole egg more), milk, olive oil, salt and pepper (to taste). Once smooth, sift in the flour and stir well until all ingredients are combined and the batter is smooth.

Heat a medium non stick skillet or crepe pan with little oil or butter over medium heat. When the pan is hot, scoop out some of the batter over it and move the skillet in a circular form to spread the batter evenly. Cook over medium heat for 1 to 2 minutes and flip, then transfer to a plate.

After the crepes are ready, the second step is making the creamy spinach filling.

In a skillet, add the fresh spinach (previously washed), the olive oil and a couple tablespoons of water. Cover with a lid and cook over medium heat until the spinach is cooked and the water has evaporated. 

Once ready, add the ricotta cheese (or cream cheese), optionally the feta and adjust with salt and pepper to your liking. Simmer over medium heat until the filling is done, stirring in more ricotta or cream cheese if you want a creamier filling.

Fill each crepes with the creamy spinach you have just prepared. The savory crepes can be served as they are or with a topping. For the topping, all you have to do is stirring some more ricotta cheese with a bit of water until it gets smooth and creamy. Drizzle over the spinach crepes and enjoy!

Ingredients

  • 1 egg
  • 2 egg whites , (or whole 1 egg more)
  • 60 ml (1/4 cup) milk of choice
  • 50 grams (1/2 cup) oat flour
  • 1/2 tbsp olive oil
  • salt and pepper

Creamy Spinach Filling

  • 80 grams (3 oz) spinach
  • 2 to 4 tbsp ricotta, see notes*
  • feta cheese
  • 1 tsp olive oil
  • salt and pepper

Instructions

  • These savory crepes can be served as they are or with a topping. For the topping, stir some more ricotta cheese with a bit of water until it gets creamy. Drizzle over the spinach crepes and enjoy!

Notes

The quantity of ricotta or cream cheese depends on how creamy you want the filling to be. Add more (about 4 tbsp) if you are looking for a creamier filling.
