In a bowl whisk together the egg with egg whites , milk, olive oil, salt and pepper . Once smooth, sift in the flour and stir well until all ingredients are combined and the batter is smooth.
Heat a medium non-stick skillet or crepe pan with little oil or butter over medium heat.
Scoop out some of the batter over the pan and move the skillet in a circular form to spread the batter evenly. Cook over medium heat for 1 to 2 minutes and flip, then transfer to a plate.
