I came up with this recipe last Sunday. On my way to making protein crepes, I was hit by cinnamon roll cravings. But I still wanted crepes, so I made cinnamon roll crepes. Or I should rather say, cinnamon protein crepe rolls.

These cinnamon protein crepe rolls may be on of my favorite breakfasts ever. And when I say it, I mean it!

They literally taste like dessert. So sinful that you’ll never guess these crepes are healthy and high protein.

The whole recipe has 40 grams of protein, without the need for protein powder. Wondering how? Well, instead of protein powder my protein crepe recipe uses egg whites and Greek yogurt. Two lean protein sources that you can find at any grocery store.

Ingredients

The recipe for these cinnamon protein crepe rolls is so easy that you won’t even need protein powder. All ingredients for both crepe rolls, filling and topping can be easily found at any grocery store.

Here is all this crepe roll recipe calls for.

  • Oat flour (or any flour)
  • Egg and egg whites
  • Maple syrup (or honey)

For the filling you’ll just need Greek yogurt, granular sweetener (I like erythritol) and ground cinnamon. If you desire, the Greek yogurt can be replaced with any other yogurt, also dairy-free. Lastly, the sugar-free topping is just granular sweetener mixed with cinnamon.

How to make cinnamon roll protein crepes

To make the protein crepes, in a bowl combine oat flour, maple syrup, egg and egg whites. Stir well until all ingredients are well combined and the batter is smooth and lump-free.

Heat a medium nonstick skillet or crepe pan with little oil or butter over medium heat. Scoop 1/3 cup of crepes batter over the pan and move the skillet in a circular form to spread the batter evenly. Cook over medium heat for 1 to 2 minutes and flip.

Cinnamon Yogurt Filling

To make the filling, mix Greek yogurt with granular sweetener and ground cinnamon. When it is ready, spread the cinnamon “sugar” filling over each crepe, then roll.

Sugar-free Cinnamon Sugar

Finally, make the topping by stirring sweetener together with cinnamon. Sprinkle on top of the protein crepe rolls and enjoy!

Tips for cinnamon protein crepe rolls

Make sure you read through these tips and you’ll get the softest and most delicious protein crepe rolls ever!

  • For tastier protein crepes, add to the batter about 1/2 teaspoon of vanilla extract.
  • Use egg whites in brick, they are so convenient.
  • Blend the protein batter in a food process and you’ll get lump-free crepes.
  • For a soft texture, do not overcook the crepes. The more you cook, the dryer your crepes.
  • If the Greek yogurt filling is too thick, thin the mixture with a drop of your favorite milk.

  • 1 tbsp maple syrup (or honey)
  • 1 egg
  • 180 ml (3/4 cup) egg whites

Cinnamon Yogurt Filling

  • 80 grams (1/3 cup) Greek yogurt
  • 1 tsp granular sweetener (erythritol)
  • 1/3 tsp ground cinnamon
  • preferred milk (if necessary, to thin)

Sugar-free Cinnamon Sugar

  • 1 tsp granular sweetener (erythritol)
  • 1/3 tsp ground cinnamon

Instructions
