Ingredients for protein lava cake

Beyond tasty and healthy, this protein lava cake recipe is also incredibly simple. All you need is a handful of ingredients that you probably already have at home. 

  • Oat flour: you can replace with any flour if your choice, such as spelt flour or all-purposes flour. 
  • Protein powder: this lava cake recipe works best with vegan protein powder or casein. Whey, on the contrary, will dry out and ruin the texture of the cake. If you don’t have protein powder, you can replace with more oat flour.
  • Cocoa powder: for a healthy lava cake, this recipe uses natural cocoa powder without added sugars. 
  • Preferred sweetener: for a sugar-free low calorie lava cake, this recipe uses erythirol. You can replace it with any sweetener of your choice, such as maple syrup, honey, coconut sugar or brown sugar.
  • Greek yogurt: this recipe will work out with any thick yogurt of your choice – dairy or nondairy. For more protein and fewer calories, this recipe uses nonfat Greek yogurt. 
  • Preferred milk: this healthy lava cake recipe can be prepared with either dairy or dairy-free milk alternatives.
  • Baking powder: this will make the protein lava cake rise.
  • Pinch of salt: this enhances all flavors and balance the sweetness.

For the healthy lava filling, you have many options. This recipe uses a tablespoon of protein chocolate spread. But you can replace it with normal chocolate spread, chocolate protein pudding or even a square of dark chocolate.

Vegan lava cake

If you follow a vegan diet or can’t eat dairy, I have good news for you. Making vegan lava cake is embarrassingly simple. All you have to do is replacing Greek yogurt and milk with dairy-free alternatives, and using a vegan protein powder. As this recipe does not require eggs, all other ingredients are already vegan.

Best protein powder for lava cake

Although you can use any type of protein powder, this recipe works best with vegan protein powder, casein or a mix of casein and whey protein powder. On the other hand, I do not recommend using only whey protein because it will dry out and your healthy lava cake won’t come out as soft and moist.

Speaking of flavor, the best options for making lava cake are chocolate, vanilla or unflavored protein powders.

How to make healthy lava cake

In a bowl, combine oat flour, protein powder, sweetener of choice, cocoa powder, baking powder, pinch of salt and Greek yogurt. Stir, while adding the milk, until you get a smooth batter.

Transfer the protein batter to a prepared ramekin (11 cm or 4 inches diameter and about 250 ml or 8.5 oz capacity) and add the chocolate protein spread in the middle. If desired, top with some chocolate chips.

Bake the protein lava cake in hot oven for 20 to 25 minutes and serve warm for the best experience. Enjoy!

  • 40 grams (1/2 scant cup) oat flour (sub with preferred flour)
  • 20 grams (3 tbsp) protein powder (best if vegan or casein)
  • 1 tbsp preferred sweetener
  • 1 tbsp cocoa powder
  • 1/2 tsp baking powder
  • pinch of salt
  • 45 grams (3 tbsp) Greek yogurt (or 1/2 mashed banana)
  • 80 ml (1/3 cup) preferred milk
  • chocolate chips (optional)

Lava Filling

  • 1 tbsp chocolate protein spread (or chocolate protein pudding, chocolate)

Instructions 

  • Preheat oven to 180 C° (350 F°).
  • In a bowl, combine oat flour, protein powder, sweetener of choice, cocoa powder, baking powder, pinch of salt and Greek yogurt. Stir, while adding the milk, until you get a smooth batter.
