Making a single serve protein cookie for one is very simple. As there is no need for egg, oil or flour, you can prepare this recipe also if you follow a vegan or gluten-free diet. Here are all ingredients that this microwave protein cookie recipe calls for. Be sure to stick around for all details and substitutes.

  • Protein powder. This single serve protein cookie recipe works best with vegan protein powder or casein – chocolate, vanilla or unflavored. I do not recommend the use of whey because your snack will come out quite dry.
  • Oat flour. Whether homemade or store-bought, oat flour is a healthier alternative to refined white flour and it is suitable for gluten-free diets. Feel free to replace with any other flour of your choice, such as wholewheat flour, spelt flour or regular all purpose flour.
  • Cocoa powder. Use natural cocoa powder to give this single serving protein cookie a chocolate flavor without all the calories and sugars of chocolate.
  • Maple syrup. This is my sweetener of choice whenever making healthier desserts at home. As an alternative you can opt for any other liquid sweetener such as honey, agave syrup or sugar-free syrup.
  • Peanut butter. For a healthy protein cookie I recommend sticking to creamy peanut butter without added sugars or oil. If you desire, replace with any other nut butter of your choice, such as almond butter, cashew butter or tahini for a nut free microwave protein cookie recipe.
  • Milk of choice. This ingredient helps mix the dough more easily. You can use either dairy or nondairy milk, but my suggestions are unsweetened almond milk, soy milk, or semi-skimmed milk for extra protein and few carbs.
  • Baking powder. This helps the cookie rise and get softer when microwaved.
  • Salt. A pinch of salt enhances the taste while balancing the sweetness level.
  • Chocolate chips. To make a healthy microwave protein cookie, this recipe uses sugar-free dark chocolate chips, but you are free to choose any other chocolate chips.

As it is one of the main ingredients in this recipe, the right protein powder choice is key in achieving a good result. Protein powder is not all the same, and picking the wrong one may leave you with a dry, rubbery cookie. 

In general, vegan protein powder and casein are the best alternatives because they do not dry out when heated. Whey protein powder instead tends to dry out and get rubbery when heated, especially if microwaved. You can still make protein cookie with whey, but you’ll need to pay yet more attention not to overcook it. Coming to flavor, any will work. Whether chocolate, brownie or vanilla, choose the one that you like the most! My recommendation is however to stick to simple flavors like chocolate or vanilla.

Stet 1: Make the dough. In a bowl, stir together maple syrup, peanut butter and a pinch of salt. Add to the mixture protein powder, oat flour, cocoa powder and baking powder.
