2 Minute Chocolate Protein Cookie

Ingredients

  • 15 grams (1 tbsp) maple syrup (or honey)
  • 15 grams (1 tbsp) peanut butter
  • pinch salt
  • 20 grams (3 tbsp) protein powder vegan or casein, see notes*
  • 10 grams (1 tbsp) oat flour
  • 10 grams (1 tbsp) cocoa powder
  • 1/3 tsp baking powder
  • 1 to 2 tsp preferred milk
  • chocolate chips

Instructions

  • In a bowl, stir together maple syrup, peanut butter and pinch of salt.
  • Add to the mixture protein powder, oat flour, cocoa powder and baking powder. Mix, adding 1 to 2 teaspoons of milk to consistency, until you get a soft cookie dough.
  • Knead the dough, then shape one large cookie or two smaller cookies and decorate with chocolate chips.
  • Microwave for 1 minute to 1 minute and 30 seconds (or bake 180°C/ 350°F for 8 to 12 minutes).

Notes

This microwave protein cookie recipe works best with vegan protein powder or casein protein powder. I do not recommend making this protein cookie with whey protein powder because it will come out dry.
