Did you know that you can make healthy flatbread with 2 ingredients only? Quick and easy, this sweet potato flatbread recipe comes in very handy for your meals, snacks or even breakfasts. And it is so versatile that you can serve it both savory and sweet!

Do you prefer normal potatoes or sweet potatoes?

Well, for me the answer is quite simple: sweet potatoes forever! With their mildly sweet taste, there is nothing I love more than oven-baked sweet potatoes. No wonder that they are on my menu every week! If it is dinner, I like siding my potatoes with chicken or salmon. And if it’s breakfast, I serve them with a generous drizzle of almond butter on top and egg white scramble on the side. Honestly, if you’ve never had sweet sweet potatoes, this is your sign. Try them with almond butter and honey, you won’t regret it!

But now I came up with a brand-new method of eating sweet potatoes: 2 ingredient sweet potato flatbread! This is literally one of my favorite recipes at the moment: easy, healthy, refined-flour free and incredibly versatile. And it’s made with oat flour too, perfect for an oatmeal addicted like me!

Healthy flatbread with 2 ingredients

As you may have noticed, this healthy flatbread recipe has just 2 ingredients: sweet potatoes and flour. For a healthier and gluten-free flatbread I used oat flour, but you are free to replace with any other flour.

Here is everything you need to make 2 ingredient sweet potato flatbread:

  • Sweet potato: the potato should be cooked, peeled and mashed until you get a smooth purée.
  • Oat flour: make sure it is oat flour, not instant oat flour! For gluten-free flatbread, use certified gluten-free oat flour. As an alternative you can replace with regular all-purposes flour or wholewheat flour.

Besides the 2 main ingredients, for an irresistible sweet potato flatbread you can add some extras. Here are some ideas for you, for both savory and sweet flatbreads!

  • Savory flatbread: add olive oil, sea salt, garlic powder, smoked paprika or any seasoning you like.
  • Sweet flatbread: add ground cinnamon, coconut sugar, brown sugar, vanilla extract or even chocolate chips.

How can I make oat flour at home?

Making oat flour at home is very quick and simple. All you need to do is adding rolled oats to a high speed blender and process until the oats have become flour. Depending on the power of your blender, this process may require a couple of minutes. The result should be a finely grounded powder, just like flour!

How to make sweet potato flatbread

Start by cooking the sweet potato, then peel and mash until you get a smooth purée.

When the potato is ready, combine it in a bowl with the oat flour (or any other flour), and optionally olive oil and salt. Mix to combine the wet and dry ingredients together – adding more flour if it is necessary (this depends on how much water the sweet potatoes have absorbed).

Sprinkle a clean surface with flour and knead the sweet potato flatbread dough until it is smooth. Divide the dough into around 5 balls, then sprinkle each with a hint of flour and roll into rounds.

Heat a nonstick pan over medium heat, greased with little oil if necessary. Place one sweet potato flatbread in the pan, cook for about 1 to 1 1/2 minutes. Once the underside has nice golden patches on it, flip and cook the other side for 30 seconds to 1 minute until the underside is golden.

Troubleshooting

This sweet potato flatbread recipe is very simple. But if you encounter any difficulty, here is how to solve the most common ones.

My flatbread dough is sticky! 

As each sweet potato cooks and absorbs water differently, you may need to adjust the dough with more oat flour (or any other flour) if the dough is too sticky.

Also, make sure that you are not using instant oat flour. Instant oat flour is not the same, and does not work for this recipe.

My flatbread dough is dry and crumbly!

This is the opposite scenario of before. Since sweet potatoes will absorb different amounts of liquid, adjust with more potato purée if the dough is too dry.

My sweet potato flatbread is tasteless!

As it is a 2 ingredient flatbread recipe, it won’t taste like the store-bought one. So, if you want a more flavorsome flatbread, add some salt and olive oil to the dough.

  • Oat flour is not instant oat flour! You can make your own by blending the oats into a flour or directly buy it from the store.
