This protein pudding pancake recipe is embarrassingly simple. You only need three ingredients and less than 10 minutes of your day. The result is a delicious breakfast that is healthy and high protein. Literally, these pancakes taste like dessert. You will never guess my recipe requires no sugar, oil nor butter!

Here is all you need to make pancakes with protein pudding.

  • Protein pudding: this recipe requires a 200 g (7 oz.) container of protein pudding, vanilla, chocolate or whatever flavor you like. Nowadays you can find protein pudding at any grocery store, usually in the dairy section close to yogurts and other cold desserts.
  • Flour of choice: you can make this protein pancake recipe with any flour you want, also gluten-free if it is necessary. I like making my protein pudding pancakes with oat flour because it is healthier and more nourishing.
  • Egg: the egg works as a binder and makes tasty, fluffy pancakes. Although I do not recommend it, you might replace a whole egg with 60 ml (1/4 cup) of egg whites. But your pancakes will not come out as soft and delicious.

Ingredients

  • 200 grams (7 oz.) protein pudding (vanilla or chocolate)
  • 1 egg
  • 40 grams (1/3 cup) preferred flour (I use oat flour)

Instructions 

  • In a mixing bowl, stir together the protein pudding with the egg until creamy. When you get a smooth mixture, sift in the flour of your choice and mix to a pancake batter.
  • Pour one scoop of pancakes batter into a hot and greased pan. Cook your pancakes over medium heat until the underside is golden and bubbles begin to appear on the surface, then flip with a spatula and cook until golden.
