I am a creature of habit, especially when it comes to my meals. Lately, I’ve been having the same breakfasts every week: egg white oatmeal Monday to Friday and pancakes on the weekend. 

Last Sunday I was about to make my coconut flour protein pancakes when I realized that I’d run out of protein powder. But I still craved protein pancakes, so I needed to improvise with what I had left. After opening the fridge, I saw a huge jar of Greek yogurt and my first thought was: “I’ll make healthy Greek yogurt pancakes!”

Ingredients

This Greek yogurt pancake recipe requires only six simple ingredients. There is no need for protein powder or special flours, so that anyone can make healthy pancakes with Greek yogurt.

Here is all this recipe calls for:

  • Rolled oats
  • Greek yogurt
  • Egg and egg whites
  • Maple syrup or honey
  • Baking powder
  • Apple cider vinegar

As an alternative to rolled oats, you can utilize quick oats or oat flour. Also spelt flour, Teff flour or all-purposes flour work. However, you may need to adapt the pancake batter with some milk or flour more, until it gets smooth.

The apple cider vinegar is not a must. However, I highly recommend it because it will make your Greek yogurt pancakes super soft and fluffy. If you don’t have it, apple cider vinegar can also be replaced with 1 teaspoon of lemon juice.

  • Maple syrup or honey

How to make Greek yogurt pancakes

Making these Greek yogurt pancakes for one is so quick and simple. You just need to ado all ingredients to a high speed blender and process until smooth. Depending on the Greek yogurt consistency, you may need to thin the batter with a bit of milk.

After blending, pour one scoop of pancakes batter into a hot and greased pan. Cook your pancakes over medium heat until the underside is golden and bubbles begin to appear on the surface, then flip with a spatula and cook until golden.  

You can serve these healthy yogurt pancakes with your favorite fruit and a drizzle of maple syrup, if you desire.

How to store Greek yogurt pancakes

To store Greek yogurt pancakes, after cooking let them cool completely. Once they have cooled, transfer to a food container or wrap in foil. At room temperature, they will last for up to 24 hours. For a longer storage, refrigerate and consume within 3 days

FAQ – Frequently asked questions

Can I prepare the pancake batter in advance?

Although I do not recommend it, you can blend all ingredients the day before and refrigerate the batter overnight. But if you have 2 minutes, I suggest making it in the morning. It’s so quick and easy!

Are those Greek yogurt pancakes gluten-free?

This healthy yogurt pancake recipe is gluten-free if you utilize certified gluten-free rolled oats. Also make sure to read though the ingredient list of the baking powder, as some may contain gluten.

How can I replace rolled oats?

You can replace rolled oats with quick oats, oat flour or any flour of your choice. If you make this recipe with flour, the batter can also be mixed in a bowl.

Can I replace egg whites for eggs?

Yes, definitely! You can substitute the two egg whites with one more egg. So, use two eggs in total.

Can I add protein powder?

Yes, definitely! There are two options for making protein powder pancakes. You can either replace part of the oats with protein powder or add the powder on top of all other ingredients. Just keep in mind is that your batter may require some milk to get fixed.

How much honey should I use?

The quantity of honey or maple syrup that this recipe requires depends on your preferences. For me, 1 tablespoon is more than enough. But based on your preferences you may need up to 2 tablespoon of honey or maple syrup.

  • 180 grams (3/4 cup) Greek yogurt
  • 1 egg
  • 2 egg whites
  • 1 to 2 tbsp honey or maple syrup, to taste
  • 1/2 tsp baking powder
  • 1 tsp apple cider vinegar

Instructions 

  • Add all ingredients to a blender and process until smooth. Depending on the Greek yogurt consistency, you may need to thin the batter with little milk.

  1. Thank you for your recipes! I made the pancakes yesterday morning and they were very good. I will make them again. I did use the lemon juice substitute that you suggested because I donโ€™t keep apple cider vinegar on hand. I also used the two whole eggs but I plan to use the one egg and two egg whites next time. I loved being able to mix all of the ingredients in the blender but it was so difficult to get every little bit of the batter out of the jar โ€” you know how that is, not wanting any of it to go to waste. Maybe next time Iโ€™ll blend the oats and then mix everything in a bowl so as not to have a drop wasted. ?
