And sometimes I still make these egg white pancakes because they are honestly SO GOOD. So good that I’ve decided to share this recipe with you. This way you can have protein pancakes also if you don’t have protein powder!
Ingredients
The recipe for these protein pancakes without protein powder is very simple. You only need six basic ingredients and 10 minutes of your day.
- Oat flour: use store-bought or homemade oat flour, gluten-free if necessary. You can replace with spelt flour, Teff flour or all purposes flour.
- Preferred sweetener: for sugar-free pancakes, this recipe uses erythritol. You can substitute with coconut sugar, brown sugar or any granulated sweetener of your choice.
- Egg and egg whites: this protein pancake recipe calls for one egg and egg whites (for convenience I like using liquid egg whites in brick).
- Greek yogurt: for more protein and moisture, Greek yogurt will make soft and fluffy pancakes. You can replace with Skyr, quark or any nondairy yogurt of your choice.
- Baking powder: for fluffier pancakes.
That’s all the basic recipe requires. But for more delicious egg white protein pancakes, you may consider adding some extras. I used 1 teaspoon of vanilla extract, some cinnamon and sliced banana on top.
Also pumpkin pie spice, lemon juice, cocoa powder or peanut butter are great options. So be creative: pick and choose your favorite flavors!

Making protein pancakes without protein powder is embarrassingly quick and easy. You will prepare and cook them in under 10 minutes. Here’s how!
Add all ingredients to a blender and process until smooth. As an alternative, you can mix all ingredients together in a bowl, until you get a lump-free batter.
Heat a nonstick skillet, slightly greased if necessary. When it is hot, pour one scoop of protein pancakes batter into the pan. Cook your pancakes over medium heat until the underside is golden and bubbles begin to appear on the surface, then flip with a spatula and cook until golden.
How to store protein pancakes
These egg white protein pancakes are also perfect for meal prepping. Make them ahead and in the morning you will have a healthy breakfast ready to eat.
To store protein pancakes, after cooking let them cool completely. Once cooled, transfer pancakes to a food container or wrap in foil. At room temperature, they will last for up to 24 hours. For a longer storage, refrigerate and consume within 3 days.
