What’s better than starting the day with fluffy pancakes? Chocolate protein pancakes, of course! That’s why this recipe quickly became my new favorite pancakes recipe because it comes with a chocolatey taste and a rich protein mousse on the top.

Who has said that you can’t eat dessert for breakfast?

These protein chocolate pancakes are so healthy that you can have them everyday. It may sound like a bold statement, but listen up! Here is why these chocolate pancakes are so nourishing:

  • They are rich in protein and low in carbs
  • My chocolate protein pancakes recipe is oil free, butter free and nut free
  • These healthy chocolate pancakes are gluten-free and can can easily become dairy-free
  • This recipe is free from refined flours and free from added sugars (if you use sugar-free sweeteners)

Ingredients and tips

With healthy, wholesome and natural ingredients only, this is the protein pancakes recipe that you have always desired! 

Here is all you need to make these chocolate pancakes, plus the replacement options and other tips for your breakfast.

Chocolate protein pancakes

Egg.

Egg whites. To keep my pancakes lower in fats I used one whole egg plus 2 egg whites. Feel free to replace the 2 egg whites with one additional whole egg (not 2, just one whole egg!).

Oat flour. I like making these protein pancakes with oat flour because it is more nutritious and gluten-free. But you can replace oat flour with your favorite flour, such as spelt flour, wholewheat flour, Teff flour or all purposes flour.

Coconut flour. A byproduct of coconut milk, this flour is more nutritious, higher in fibers and lower in carbs than normal flour. But beware, coconut flour is not the same of desiccated coconut or coconut flakes! 

Replace coconut flour with 30 grams (1/3 cup) oat flour or almond flour if you want to keep the carbs low.

Chocolate protein powder. This protein pancakes recipe can be prepared with whey protein powder or vegan protein powder. You can also replace chocolate protein powder with unflavored protein powder and adjust with more sweetener to taste.

Granulated sweetener of choice. This recipe uses erythritol for a calorie-free and sugar-free option. As a substitute you can sweeten these protein pancakes with any granulated sweetener you like the most. Coconut sugar, date sugar or brown sugar are my top picks.

Cocoa powder. A must for this recipe, use natural cocoa powder for healthy chocolate pancakes. 

Milk of choice. This chocolate protein pancakes recipe uses unsweetened soy milk. I like making my recipes with this milk because it is rich in protein, low in carbs and so versatile. As an alternative, you can make these pancakes with your favorite milk, both nondairy and dairy options work. 

Baking powder. This will make your coconut flour pancakes rise.

Apple cider vinegar. This ingredient is optional but highly recommended if you want to get super fluffy pancakes. 

Chocolate chips. Gooey chocolate chips make these pancakes so indulgent! You can use dark chocolate chips or dairy chocolate.

Protein chocolate mousse

  • Greek yogurt. This healthy chocolate pancakes recipe uses (low-fat) Greek yogurt because it is high in protein. You can replace Greek yogurt with your favorite yogurt – also dairy-free, best if it has a firm texture. My recommendations are soy Greek yogurt or Skyr, Skyr, quark and coconut yogurt.
  • Cocoa powder
  • Sweetener of choice
  • Milk of choice (to thin)

How to make low carb chocolate pancakes

Making these low carb chocolate pancakes is so quick and easy that they come together in a bowl in 15 minutes.

Step 1. Optional for fluffier chocolate pancakes. Stir milk of choice together with apple cider vinegar and set aside for 2 to 5 minutes.

Step 2. In a bowl combine oat flour, coconut flour, chocolate protein powder, cocoa powder, sweetener of choice, chocolate chips and baking powder.

Step 3. Add egg, egg whites and pour in the milk mixture (milk + apple cider vinegar, or use just milk). Stir to combine, without over-mixing and let chocolate protein pancake batter rest for 5 minutes (optional but recommended).

Step 4. Pour one scoop batter into hot and greased pan. Cook your pancakes over medium heat until the underside is golden and bubbles begin to appear on the surface, then flip with a spatula and cook until golden.

Protein chocolate ganache

In a small mixing bowl stir together Greek yogurt with cocoa powder and granulated sweetener of choice. Thin the cream with milk to consistency. Finally, top your chocolate protein pancakes with the protein yogurt mousse and serve.

Ingredients 

  • 1 egg
  • 2 egg whites (sub with whole 1 egg)
  • 20 grams (2 tbsp) oat flour
  • 20 grams (2 tbsp) coconut flour (sub with 30 grams oat flour)
  • 20 grams (2 tbsp) chocolate protein powder (see notes*)
  • 10 grams (1 tbsp) cocoa powder
  • 1/2 to 1 tbsp granulated sweetener of choice (sugar-free if required)
  • 1 tsp chocolate chips
  • 1/2 tsp baking powder
  • 1/2 tsp apple cider vinegar (optional for fluffy pancakes)
  • 70 to 80 ml (1/3 cup) milk of choice (see notes*)

Protein Chocolate Mousse

  • 60 grams (1/4 cup) Greek yogurt (sub with firm yogurt of choice)
  • 1 1/2 tsp cocoa powder
  • 1/2 tsp sweetener of choice (sugar-free if required)
  • milk of choice (to thin)

Instructions 

  • Optional for fluffier chocolate pancakes. Stir milk of choice together with apple cider vinegar and set aside for 2 to 5 minutes.
  • In a bowl combine oat flour, coconut flour, chocolate protein powder, cocoa powder, sweetener of choice, chocolate chips and baking powder.
  • Add egg, egg whites and pour in the milk mixture (milk + apple cider vinegar, or use just milk). Stir to combine, without over-mixing the protein pancakes batter.

  • This chocolate protein pancakes recipe can be prepared with whey protein powder or vegan protein powder. If you make this recipe with whey protein use 70 ml (1/3 scant cup) milk or use 80 ml (1/3 cup) milk if you are using plant based protein powders.
  • Replace chocolate protein powder with unflavored protein powder and adjust with more sweetener to taste.
