- Oat flour (or flour of choice)
- Egg whites
- Milk of choice
On the top of that, you may want to make sweeter crepes by adding a couple teaspoons of your favorite sweetener. For my crepes I like using erythritol or stevia because these are the sweeteners without additional sugars or extra calories.

- In a bowl combine together oat flour, sweetener of choice, egg whites and milk of choice. Stir well until all ingredients are well combined and the batter is smooth and lump-free.
- Heat a large non stick skillet or crepe pan with little oil or butter over medium heat. Scoop 1/3 cup crepes batter over the pan and move the skillet in a circular form to spread the batter evenly. Cook over medium heat for 1 to 2 minutes and flip.
- For the filling, simply use yogurt or mix it with sweetener (to taste) if you want a sweeter filling.
- Here is how to make the low calorie topping, instead. In a mixing bowl, stir together cocoa powder with sweetener of choice (to taste) and milk to consistency (around 2 to 3 tablespoons, you should get a smooth cream, not a runny liquid).
