- 40 grams (1/2 scant cup) oat flour (sub with flour of choice)
- 1/2 to 1 tbsp sweetener of choice (erythritol)
- 180 ml (3/4 cup) egg whites
- 30 ml (2 tbsp) milk of choice
Filling
- 80 grams (1/3 cup) 0% Greek yogurt
- sweetener of choice (to taste)
- milk of choice (to thin)
Low Calorie Chocolate Topping
- 2 tsp cocoa powder
- sweetener of choice (to taste, ca. 1 tsp)
- milk of choice (to consistency, ca. 2 to 3 tbsp)
In a bowl combine together oat flour, sweetener of choice, egg whites and milk of choice. Stir well until all ingredients are well combined and the batter is smooth and lump-free.
Heat a large non stick skillet or crepe pan with little oil or butter over medium heat.
Scoop 1/3 cup crepes batter over the pan and move the skillet in a circular form to spread the batter evenly. Cook over medium heat for 1 to 2 minutes and flip.
