Best Protein Crepes without Protein Powder

Quick and easy to make, these are the best protein crepes ever! These protein crepes without protein powder come with a yogurt filling and are perfect for a healthy and delicious breakfast.

Ingredients

  • 40 grams (1/2 scant cup) oat flour (sub with flour of choice)
  • 1/2 to 1 tbsp sweetener of choice (erythritol)
  • 180 ml (3/4 cup) egg whites
  • 30 ml (2 tbsp) milk of choice

Filling

  • 80 grams (1/3 cup) 0% Greek yogurt
  • sweetener of choice (to taste)
  • milk of choice (to thin)

Low Calorie Chocolate Topping

  • 2 tsp cocoa powder
  • sweetener of choice (to taste, ca. 1 tsp)
  • milk of choice (to consistency, ca. 2 to 3 tbsp)

Instructions

  • In a bowl combine together oat flour, sweetener of choice, egg whites and milk of choice. Stir well until all ingredients are well combined and the batter is smooth and lump-free.
  • Heat a large non stick skillet or crepe pan with little oil or butter over medium heat.
  • Scoop 1/3 cup crepes batter over the pan and move the skillet in a circular form to spread the batter evenly. Cook over medium heat for 1 to 2 minutes and flip.

Filling

  • For the filling, just use Greek yogurt or mix it with sweetener (to taste) if you want a sweeter filling.

Low Calorie Chocolate Topping

  • In a mixing bowl stir together cocoa powder with sweetener of choice (to taste) and milk to consistency (around 2 to 3 tablespoons, you should get a smooth cream, not a runny liquid).
