- Xanthan gum. A small amount of xanthan gum will ensure that the keto gelato sets and becomes smooth. Further, it prevents the cream from icing up in the freezer.

- Peanut butter. Add 3 tablespoons of creamy peanut butter before blending. You can serve it with crumbled keto peanut butter cookies or dark chocolate chips for cookie dough keto ice cream.

How to make keto ice cream without carbs
Prepare the base. Add heavy cream, granulated sweetener and xanthan gum to a blender or food processor. Blend for a couple of minutes, or until the mixtures reaches a soft serve consistency. If you don’t have a blender, place all ingredients into a tall bowl or jar and beat until smooth with a hand mixer.
Freeze and serve. Transfer the ice cream base to an airtight food container and freeze for minimum 4 hours. Make sure you stir the mixture every 30 minutes so that it won't freeze and get icy. When you are ready to serve, remove from the freezer and let it sit for about 10 minutes before eating.
Storage directions
Leftovers can be stored in the freezer for up to one month. To preserve taste and texture, place the no carb ice cream into an airtight container or in a loaf pan lined with parchment paper and cover well to prevent freezer burns. Freeze for up to 1 month. If before serving it is too icy, let the sugar free ice cream sit on the counter for about 15 minutes.

- Make dairy-free vegan keto ice cream by replacing heavy cream with full fat coconut cream. Please note than coconut cream is not the same as coconut milk, they are two different products.

This is similar to a recipe that I use for "stabilized whipped topping", heavy whipping cream, sweetener and vanilla extract with a whisk gives you similar to Reddi-whip whipped topping, adding 1/4 tsp xanthan gum when using a whisk gives you something similar to Cool Whip "stabilized whipped topping".
I used your recipe with my smoothie blender and it only took a few seconds.
I made butter pecan and vanilla, I stirred in shredded pecans when I started the freezing process, adding the minced pecans at the beginning of the freezing process gave it a nice texture.
Plain vanilla is good too but it has more of a Cool Whip flavor and texture.
I will definitely be making this since I don't have the counter space being in a small apartment for an ice cream maker and the boyfriend really liked the butter pecan.
