- 1 cup heavy cream or coconut cream
- 2 to 3 tbsp granulated sweetener such as erythritol, monk fruit sweetener or xylitol
- ¼ tsp xanthan gum
Add heavy cream, granulated sweetener and xanthan gum to a blender or food processor. Blend for a couple of minutes, or until the keto ice cream reaches a soft serve consistency.If you don’t have a blender, place all ingredients into a tall bowl or jar and beat until smooth using a hand mixer. Transfer the mixture to an airtight container and freeze for minimum 4 hours. Stir every 30 minutes to prevent the ice cream from getting icy.
Remove from the freezer about 10-15 minutes before serving.
