The best healthy mayo

Regular mayonnaise is made with raw eggs, low quality seed oil, sugar and vinegar. While its creamy texture and rich flavor are impossible to resist, it has gained a bad rap for being high in fats and calories.

I absolutely love mayo, with fries or on its own, straight from the jar. So, I decided to create a healthier version using avocados. My inspiration came from trying Chipotle avocado mayo in Los Angeles, and ever since, it’s become my favorite. After that, I got it a couple of times from Trader Joe’s, Aldi and Costco. Until I came up with this recipe, healthier and much better than Kraft and Hellman’s combined. Believe me, you will love this recipe!

Ingredients and substitutes

The recipe for avocado oil mayonnaise is so easy. It only requires 4 ingredients that you probably already have at home. I have included the complete list of ingredients with quantities in the recipe card down below. But for the moment, here are some details.

  • Ripe avocado. The best avocados have dark green to black skin and feel slightly soft to the touch. If the stem comes off easily and shows green underneath, they’re ripe and ready. As in my avocado brownies recipe, I recommend a large Hass avocado.
  • Avocado oil. I like making avocado oil mayo because it has a nice, mild flavor and is packed with nutrients. You can substitute it with extra virgin olive oil if you prefer, but I do not recommend using seed oils.
  • Lime Juice. Lime juice complements the flavors, prevents the avocado from turning black and helps preserve the mayonnaise for longer.
  • Sea Salt. Add a pinch of sea salt to enhance all the flavors and whip up the best creamy avocado mayo at home.

Besides salt, you can blend the avocado and mayo ingredients with additional seasonings. Some of my favorite seasonings are ground black pepper, garlic powder, onion powder, cayenne pepper and chili flakes. Especially chili flakes, they add a spicy touch that you won’t be able to resist.

How to make avocado mayo without eggs

Step 1 – Prepare the avocado. Halve the avocado and remove the skin and seed. Roughly chop the avocado and place it in a blender.

If you don’t have a high speed blender, you can make vegan avocado mayonnaise with an immersion blender, with a fork, or with a potato masher.

  • With an immersion blender. Put all ingredients into a tall, narrow container and insert the blender. Process until the eggless mayonnaise becomes smooth and creamy.
  • With a fork or a potato masher. Add the chopped ripe avocado to a bowl and mash until it reaches a smooth consistency free of lumps.

Step 2- Blend until creamy. Add to the blender or container avocado oil, the juice of a lime, salt and optionally pepper. Blend on high until the mayo reaches a smooth texture free of lumps.

How to store avocado mayo

Homemade avocado mayo sauce can be served immediately, or it can be made ahead for later. To store it, transfer the mayo to a mason jar with sealable lid or to an airtight container and refrigerate. In the fridge, it will last for up to 3 days. Since this recipe uses lime juice, the avocado will not turn black and rotten.

This avocado mayonnaise recipe is not suitable for freezing because it may get watery, lose its texture and its flavors. Freezing and thawing it can cause the ingredients to separate, resulting in a less creamy and flavorful mayo.

How to use avocado mayonnaise

This avocado oil mayo is just like regular mayonnaise, but made healthy with avocado and no eggs. You can use it as a spread on sandwiches, burgers, ground turkey, and breakfast burritos for added creaminess and flavor. It’s also great for salad dressings or as a topping for nourishing bowls

The best way to serve avo mayo is as a dip for fries and meat. It pairs so well with air fryer sweet potato fries, low calorie fries, carrot fries, air fryer tortilla chips, and air fryer chicken tenders. You will love it with crispy air fryer tofu, if you eat vegan.

  • ¼ cup (60 ml) avocado oil, or olive oil
  • 1 small lime, or lemon, freshly squeezed juice
  • ¼ tsp salt, or to taste

Instructions
