Avocado Mayo

- 1 large avocado ripe, I recommend Hass avocado
- ¼ cup (60 ml) avocado oil or olive oil
- 1 small lime or lemon, freshly squeezed juice
- ¼ tsp salt or to taste
- ground black pepper optional, to taste
Halve the avocado and remove the skin and seed. Roughly chop the avocado and place it in a blender. If using an immersion blender, put it in a tall, narrow container.
Add to the blender or container the avocado oil, the juice of a lime, salt and optionally pepper. Blend on high until the avocado mayo reaches a smooth consistency free of lumps.
Serve immediately or place avocado mayo into a mason jar and store covered for a maximum of 3 days.
