If you have some zucchini in the fridge, try this recipe. Air fry zucchini chips for 10 minutes and you’ll whip up a batch of crispy snacks that everyone is going to love. They’ll disappear in the blink of an eye, so you’ll make them again and again this summer. As for air fryer tortilla chips, air fryer zucchini fries and air fryer sweet potato fries, these veggie chips are healthy and good for the diet. Cooking in an air fryer cut the oils, fats and calories. Plus it’s so much quicker, perfect on a hot summer day when you don’t want to turn on the oven.

This zucchini chips airfryer recipe brings me back to childhood. When I was living in Italy as a kid, Nonna Angela – aka my grandma – would fry leftover zucchini into chips. Of course, she used to deep fry them. They were oh so delicious, with a Parmesan cheese garlicky flavor and a crispy texture. Looking for healthier alternatives to grandma’s masterpiece, I came up with these air fryer zucchini chips. Our newest favorite veggie snack here at home, you’ll love them too!

Recipe ingredients

  • Zucchini. For the best and crispiest air fryer zucchini chips, use a medium-size zucchini. Avoid large zucchini with wide diameter, as they contain more water and taste bitter.
  • Olive oil. I recommend extra virgin olive oil, it is healthier and more flavorful. As an alternative you can use avocado oil, coconut oil, or seed oil.
  • Seasonings. These airfryer zucchini chips can be seasoned however you like, read further for some ideas. I tossed mine with kosher salt, ground black pepper and garlic powder.

The best seasonings for air fried zucchini chips

  • Spicy – Mix the sliced vegetables with chili powder, smoked paprika, cayenne pepper, or a drop of hot sauce.
  • Italian – Add a Mediterranean touch with Italian seasonings or dried herbs like dried basil and rosemary.
  • Oniony – Make sure to include some dried onion for an extra kick of flavor.
  • Lemon garlic – When drizzling with olive oil, add some lemon juice and then season with garlic powder.
  • Honey mustard – Drizzle your zucchini slices with honey and a hint of Dijon mustard.
  • Everything bagel – Toss in the bowl a bit of everything bagel seasoning mix.
  • Parmesan – Season air fryer courgette chips with a good amount of Parmesan cheese.

How to make air fryer zucchini chips with no breading

  1. Preheat air fryer. Preheat your air fryer to 350 degrees °F (180 degrees °C).
  2. Prepare zucchini. Wash the zucchini very well and trim the ends. With the help of a sharp knife or a mandolin, slice the zucchini into thin slices of about ⅛ inches. Pat the zucchini slices dry with a paper towel or a clean kitchen towel and add them to a bowl.
  3. Season chips. There is no need to soak zucchini, so you can directly season them. Drizzle the veggie rounds with olive oil and season with salt, pepper and garlic powder. Gently toss to combine.
  4. Air fry veggie chips. Arrange the seasoned zucchini slices in the air fryer basket, on a single layer. Make sure you do not overcrowd the air fryer basket, or the chips won’t crisp up. Cook in hot air fryer for about 5 to 6 minutes, then flip and cook on the other side for 4 to 5 minutes more. Zucchini chips are ready when golden and crispy.

Why are my air fryer chips not crispy?

There are two main reasons why vegetables from the air fryer are not crispy. First, you did not pat the zucchini dry. Second, you have fitted too many zucchini chips in the air fryer basket.

But don’t worry, I’m here to help you. To prevent air fryer zucchini chips from getting soggy, make sure you pat them dry very well once sliced. For this, use a clean kitchen towel or a paper towel. Once sliced, dried and seasoned, line the vegetable slices in a single layer in the air fryer basket. Do not overcrowd it, or they won’t crisp up at all. I always recommend air frying in multiple batches.

Storage directions

This zucchini chips air fryer recipe can be prepared ahead for upcoming snacks and parties. Before storing, allow the veggie chips to cool completely to room temperature. You can arrange them on a plate or over a wire rack. Once they are cool, place in an airtight container or in zipper bags and store in a dry, cool place for up to 3 days. You may need to quickly air fry them again before serving, so they re-crisp. Do not refrigerate, or they will get soggy.

To freeze, pack in zipper bags and place in the freezer for up to 1 month. Before serving, allow them to thaw completely and then air fry for a couple of minutes until crispy.

Recipe tips

  • Use a mandoline slicer to cut the zucchini into thin slices. Besides being quicker and faster, a mandoline will also ensures that your chips will have the same width. If you don’t have it, use a sharp chef knife, but make sure the zucchini rounds have more or less the same size.
  • Customize this zucchini chips air fryer recipe with the addition of your favorite spices and seasonings. My recommendations are Parmesan cheese, garlic powder, onion powder, Italian seasoning and smoked paprika.
  • Do not overcrowd the air fryer basket, or the veggie snacks won’t crisp up. To prevent them from getting soggy, arrange your healthy zucchini chips in a single layer. It’s better to cook them in multiple batches, so they will all come out delicious.
  • Adjust cooking times to your own needs, depending on the power of your air fryer. Some are bigger, some are more powerful, while some cook faster. Check the chips after about 5 minutes, then flip and cook on the other size. They are done when golden and crispy.

Serving ideas

These air fryer zucchini chips are just like regular chips, but much healthier, lower in calories, and keto. This means that they are perfect on their own, or with dipping sauces. For a more satisfying snack, try them with guacamole, homemade salsa, ketchup, keto BBQ sauce, homemade Big Mac sauce, or creamy hummus. These keto zucchini chips are also great as a side for grilled chicken, air fryer tofu, or steak.
