Recipe ingredients
- Zucchini. For the best and crispiest air fryer zucchini chips, use a medium-size zucchini. Avoid large zucchini with wide diameter, as they contain more water and taste bitter.
- Olive oil. I recommend extra virgin olive oil, it is healthier and more flavorful. As an alternative you can use avocado oil, coconut oil, or seed oil.
- Seasonings. These airfryer zucchini chips can be seasoned however you like, read further for some ideas. I tossed mine with kosher salt, ground black pepper and garlic powder.

- Spicy - Mix the sliced vegetables with chili powder, smoked paprika, cayenne pepper, or a drop of hot sauce.
- Italian - Add a Mediterranean touch with Italian seasonings or dried herbs like dried basil and rosemary.

How to make air fryer zucchini chips with no breading

- Season chips. There is no need to soak zucchini, so you can directly season them. Drizzle the veggie rounds with olive oil and season with salt, pepper and garlic powder. Gently toss to combine.
- Air fry veggie chips. Arrange the seasoned zucchini slices in the air fryer basket, on a single layer. Make sure you do not overcrowd the air fryer basket, or the chips won't crisp up. Cook in hot air fryer for about 5 to 6 minutes, then flip and cook on the other side for 4 to 5 minutes more. Zucchini chips are ready when golden and crispy.
Why are my air fryer chips not crispy?
There are two main reasons why vegetables from the air fryer are not crispy. First, you did not pat the zucchini dry. Second, you have fitted too many zucchini chips in the air fryer basket.
But don't worry, I'm here to help you. To prevent air fryer zucchini chips from getting soggy, make sure you pat them dry very well once sliced. For this, use a clean kitchen towel or a paper towel. Once sliced, dried and seasoned, line the vegetable slices in a single layer in the air fryer basket. Do not overcrowd it, or they won't crisp up at all. I always recommend air frying in multiple batches.
Storage directions
This zucchini chips air fryer recipe can be prepared ahead for upcoming snacks and parties. Before storing, allow the veggie chips to cool completely to room temperature. You can arrange them on a plate or over a wire rack. Once they are cool, place in an airtight container or in zipper bags and store in a dry, cool place for up to 3 days. You may need to quickly air fry them again before serving, so they re-crisp. Do not refrigerate, or they will get soggy.
To freeze, pack in zipper bags and place in the freezer for up to 1 month. Before serving, allow them to thaw completely and then air fry for a couple of minutes until crispy.
