Preheat air fryer to 350°F (180°C).
Wash the zucchini very well and trim the ends.
With the help of a sharp knife or a mandolin, slice the zucchini into thin slices of about ⅛ inches.
Pat the zucchini slices dry with a paper towel or a clean kitchen towel and add them to a bowl.
Drizzle zucchini with olive oil and season with salt, pepper and garlic powder. Gently toss to combine.
Arrange the seasoned zucchini slices in the air fryer basket, on a single layer. Make sure you do not overcrowd the air fryer basket, or the chips won't crisp up.
Cook in hot air fryer for about 5 to 6 minutes, then flip and cook on the other side for 4 to 5 minutes more. Zucchini chips are ready when golden and crispy.
