How to make air fryer potato chips crispy

  1. Slice the potatoes. Start by slicing the potatoes into thin slices of about ⅛ inches. I recommend using a mandoline slicer, but you can also slice potatoes with a sharp knife. What is important is that your slices have more or less the same size.
  2. Soak the potatoes. Fill a large bowl with cold water and ice. Add the sliced potatoes to the iced water and allow them to soak for 20 to 30 minutes. The soaking is essential because it ensures that the chips get crispy in the air fryer.
  3. Dry the slices. Drain and pat dry the potato slices using a paper towel or a clean kitchen towel. Make sure you pat them dry very well, or your chips will not crisp up.
