Air Fryer Potato Chips

- 2 medium Russet potatoes
- 1 tbsp olive oil
- ½ tsp sea salt or more to taste
Slice the potatoes into thin slices of about ⅛ inches. I recommend using a mandoline slicer, but you can also slice potatoes with a sharp knife. Fill a large bowl with cold water and ice. Add the sliced potatoes to the iced water and allow them to soak for 20 to 30 minutes. The soaking is essential for making crispy air fryer chips.
Drain and pat dry the potato slices using a paper towel or a clean kitchen towel. Make sure you pat them dry very well, or your chips will not crisp up.
Preheat air fryer to 350°F (180°C).
Transfer the dried potato slices to a bowl, then drizzle with olive oil and season with salt. Optionally, you can add extra seasonings. Gently toss to combine.
Arrange the seasoned potato slices in the air fryer basket, in a single layer. Make sure you do not overcrowd the air fryer basket, or the potato chips won't crisp up.
Cook in hot air fryer for about 15 - 20 minutes, shaking and flipping every 5 minutes. Check them out regularly, the chips are ready when golden and crispy.
