Craving sweets but you are on a keto? Let me help you. From keto ice cream to keto chocolate cake, here on MattsfitChef there’s a recipe for any occasion. And from today, we also have this rich sugar-free chocolate mousse. Because eating keto doesn’t mean you can’t enjoy desserts.

Easy keto chocolate mousse recipe

Made with no heavy cream, no dairy, no eggs, no sugar and no gelatin, this is a fuss-free keto mousse recipe. You’ll only need 2 simple ingredients: dark chocolate and water. Yes, that’s correct. Surprising as it may seem, if you whisk melted chocolate over iced water you get a super fluffy mousse. Keto, of course.

You will love this recipe so much. Chocolatey and so satisfying, it is bound to become your new obsession. It comes in handy for weekend desserts, late-night treats, birthdays and Valentine’s Day. Next time you throw a party, prepare it for your guests. They will all be astonished when you tell them it’s a low carb sugar-free chocolate mousse.

The best part of this recipe? You can customize it to your own likings. Whisk in some orange zest, vanilla extract or peppermint, the choice is up to you. And don’t forget to serve it with all your favorite toppings, my recommendation is coconut cream and shaved chocolate.

2 ingredient keto mousse

This low carb mousse recipe is pretty simple, you just need 2 ingredients. For the sake of completeness, I recommend reading through the next lines to learn all details. As always, precise amounts are provided in the recipe card down below.

  • Sugar-free chocolate. This keto mousse recipe can be prepared with any kind of no sugar chocolate. Choose sugar-free chocolate chips and it will be on the sweet side, or use extra dark chocolate and it will taste more intense. My top pick is Lindt 85% without sugar, I like my dessert slightly bitter.
  • Water. You’ll need a bowl of cold water plus ice for the ice bath, and a cup of hot water to melt the chocolate. It can’t get any simpler than this.

In addition to chocolate and water, you may want to sweeten the mousse with a couple tablespoons of your favorite keto sweetener. Monk fruit blend, erythritol, xylitol and allulose are all great picks. The addition of sweeteners comes down to your preferences. I personally like my dark chocolate keto mousse less sweet and more intense, so no extra monk fruit. But my girlfriend prefers it sweeter.

How to make keto chocolate mousse

Step 1- Prepare the ice bath. Fill one of the bowls with cold water (not the hot water, we will need it later) and ice cubes.

Step 2 – Melt the chocolate. Chop the chocolate and add it to a separate bowl. Pour a cup of hot water over the chocolate and mix with the help of a whisk until it has melted completely. The final result should be a smooth chocolatey mixture.

Step 3 – Whisk keto mousse. Place the bowl with melted chocolate on top of the bowl containing the ice bath. Using an electric whisk or a hand whisk, whisk very well until it reaches a smooth, fluffy consistency. Make sure you do not overmix it.

Step 4 – Refrigerate and serve. Transfer keto chocolate mousse to individual ramekins, cover with plastic wrap and refrigerate for at least 2 hours. In the fridge, it will last for up to 4 days.

Recipe tips

  • Do not over-mix the dairy-free keto mousse, just whisk until it is smooth and creamy. If you whisk it for too long, the dessert will incorporate too much air and it will get overly fluffy. The result? After refrigerating, it will lose its fluffiness and deflate.
  • Use high quality chocolate, such as Lindt or Ghirardelli. As it is the main – and only – ingredient, it will make or break the dessert. Additionally, pick a cocoa percentage that you truly like.
  • Add a couple tablespoons of keto sweetener if you want a sweet mousse, or if you use extra dark chocolate. Taste it and whisk in some monk fruit or erythritol until it reaches the desired flavor.
  • Experiment with additional ingredients and toppings to make your own version of vegan keto chocolate mousse. Some mix-in ideas are orange zest, vanilla extract, coffee powder, chili flakes, and sea salt. Delicious toppings are keto caramel sauce, keto ice cream, coconut whipped cream, and crushed walnuts.

Storage directions

This keto chocolate mousse recipe can be stored in the fridge for up to 4 days. To preserve flavor and texture, transfer the mixture to individual ramekins or serving cups. Cover with plastic wrap and refrigerate immediately. It will stay fresh for as long as 4 days. Unfortunately, a 2 ingredient keto mousse does not freeze well.

How many carbs in dairy-free keto chocolate mousse?

A serving of this keto mousse contains about 1.1 grams of net carbs. Please keep in mind that this value is an approximation, as precise nutritional facts depend on the chocolate you use.

      1. Matteo,
Is it OK to use an immersion blender to either get started, to finish or mix the whole time please?
        Sandra

        1. Hey dear Sandra,
thank your for your comment. I haven’t tried it with immersion blender yet. But I think it might work provided that it mixes well the chocolate. You need to create a whisk-like effect. In either case, let me know if you try! I’m curious about the result ๐Ÿ˜‰
Have a great weekend and experimentation in the kitchen,
          Matteo
