Keto Chocolate Mousse

This 2 ingredient Keto Chocolate Mousse is rich, creamy and so fluffy that you won't ever believe it is sugar-free, dairy-free, eggless and vegan! The perfect low carb dessert to satisfy your sweet tooth.

Ingredients

  • 6 oz (170 g) dark chocolate sugar-free
  • 1 cup (240 ml) hot water
  • 2 to 4 tbsp granulated sweetener optional, to taste (see notes*)
  • cold water and ice

Optional ingredients

  • ½ tsp vanilla extract
  • a pinch of sea salt

Instructions

  • Prepare two medium-size bowls.
  • Fill one of the bowls with cold water (not the hot water, we will need it later) and ice cubes.
  • Chop the chocolate and add it to the second bowl. Pour hot water over the chocolate and mix with the help of a whisk until the chocolate has melted completely.
  • Place the bowl with melted chocolate on top of the bowl with iced water. Using an electric whisk or a hand whisk, whisk very well until it reaches a smooth consistency.
  • Transfer keto chocolate mousse to individual ramekins, cover with plastic wrap and refrigerate for at least 2 hours. In the fridge, it will last for up to 4 days.

Notes

  • Add a couple tablespoons of keto sweetener if you want a sweet mousse, or if you use extra dark chocolate. Taste it and whisk in some monk fruit or erythritol until it reaches the desired flavor.
  • Nutritional values represent net carbs, assuming that the mousse is prepared with sugar-free chocolate.
