I am the king of easy brownie recipes. My 3 ingredient banana brownies and pumpkin brownies went viral all over social media. Since you guys seem to appreciate this kind of desserts, I kept on with my experiments.

Today MattsfitChef is excited to share the best sugar-free chocolate brownies ever. And when I say they’re healthy, I mean it. There’s no need for flour, oats, sugar, oil, butter or milk. This time you won’t find nuts and nut butter, so that also those on a low calorie diet can enjoy their sweet treat. Plus, they are low carb and good for diabetics.

At first glance, you wouldn’t believe how simple the ingredients are. That’s why I call this my magic brownie recipe – made in a blender with just apples, eggs and cocoa powder!

Ingredients

This recipe only requires apples, eggs and cocoa powder – no need for flour, nut butter and maple syrup. In the next lines you will find more details, tips and some substitutes. I’ve included precise quantities in the recipe card at the end.

  • Apples – For a sweet flavor, I recommend using sweet apples like Fuji, Honeycrisp, or Gala. Be sure to peel, core and dice them into chunks to ensure easier blending. As an alternative, you can replace apples with two pears or two medium bananas.
  • Eggs – You’ll need two large eggs, both whites and yolks. Eggs will help your flourless brownies achieve the perfect texture as they bake.
  • Cocoa powder – To keep the dessert sugar-free, use unsweetened cocoa powder. Dutch cocoa powder or baking cacao will also work, but be mindful about added sugars.

Apples provide already plenty of natural sweetness, but if you want to enhance the flavor even further, I recommend adding some maple syrup. Two to three tablespoons should be enough. Other great mix-ins are a dash of vanilla extract, a hint of coffee powder, ground cinnamon and dark chocolate chips.

How to make sugar free brownies

Step 1 – Prep. Preheat your oven to 350°F (180°C) and fold a 7×7 in (15 cm x 15 cm) brownie pan with parchment paper.

Step 2 – Blend. Cut the peeled apples into chunks, then add to a blender with eggs, cocoa powder and optionally baking powder. Blend on high until smooth and free of lumps. Optionally, you can add 2 to 3 tablespoons of maple syrup for sweeter brownies.

Step 3 – Bake. Transfer the batter to the prepared pan and spread it out evenly with the help of a spatula. Bake in hot oven for 20 to 27 minutes, or until they are no more raw inside. Let cool completely at room temperature before slicing.

Recipe variations

  • Different fruit. If you are not a fan of apples, replace them with 2 medium ripe bananas. This recipe works wonderfully also with pears, pumpkin puree may be good but I haven’t tested it yet.
  • Vegan and eggless. Make eggless brownies with no sugar by substituting them with 2 flaxseed eggs or chia eggs.
  • High protein. Add a scoop (30 g) of protein powder to the ingredient list. You may need a splash of milk, in case the batter becomes too thick after blending. As an alternative, replace cocoa powder for chocolate flavor protein powder.
  • Keto-friendly. These sugar-free cocoa brownies are already low carb, but you can cut carbohydrates even further by replacing apples with about 1 ½ cup of pumpkin puree.

Matteo’s tips

  • Use sweet apples. As this recipe has no sugar, choosing naturally sweet apples will boost flavors and keep the dessert deliciously moist. My recommendations are Fuji, Honeycrisps and Gala.
  • Add natural sweetness. To achieve a sweet taste without sugar or syrups, I recommend adding a dash of vanilla extract, little ground cinnamon or a hint of coffee powder. Another natural alternative to sugar are dates, which can be blended together with all other ingredients.
  • Customize with mix-ins. Feel free to personalize your brownie with extra ingredients, such as chocolate chips, chopped walnuts, pecans, or protein powder.

Storage directions

  • To store. Let the brownies cool to room temperature, then slice them into six squares and place into an airtight food container. At room temperature they will last for up to 2 days, in the fridge they will maintain their freshness for a maximum of 4 days. 
  • To freeze. For a longer storage, pack in an airtight food container or in a zipping bags and freeze for up to 3 months. You can reheat them in hot oven at 350°F (180°C) for a couple of minutes or in the microwave for about 30 seconds.

How can I replace eggs?

Two flaxseed eggs or chia seed eggs will substitute eggs. Unfortunately, this recipe does not work with egg whites.

Do they taste eggy?

No, apples and cocoa powder will provide a sweet chocolate flavor and cover the taste of eggs.
