Preheat oven to 350°F (180°C) and fold a 7x7 in (15 cm x 15 cm) brownie pan with parchment paper.
Cut the apples into chunks, then add to a blender with eggs, cocoa powder and optionally baking powder. Blend on high until smooth and free of lumps. Optionally, you can add 2 to 3 tablespoons of maple syrup for sweeter brownies.
Transfer the batter to the prepared pan and spread it out evenly with the help of a spatula.
Bake in hot oven for 20 to 27 minutes, or until they are no more raw inside. Let cool completely at room temperature before slicing.
