Point of view, breakfast is the best meal of the day. I usually work out in the morning and back from the gym, I’m ravenous for food. - Eggs – Choose six large eggs, I recommend grade A eggs from free range chickens. For less fat, substitute 2 eggs for 3 egg whites.
- Cottage cheese – You’ll want to use full fat cottage cheese, it has a much richer taste and texture than low fat options. If you are not a fan, replace with cream cheese or ricotta.
- Shredded Gruyère – Gruyère cheese gives the traditional savory and nutty flavor. Great replacements are shredded cheddar or white cheddar, shredded mozzarella, Monterey Jack and Swiss cheese.
- Turkey ham – Sliced turkey ham substitutes bacon for healthier egg bites that are lower in calories and fats. Feel free to use bacon or regular ham.
- Seasonings – To keep it simple, season with just kosher salt and freshly ground black pepper. Of course you can add other herbs and seasonings, but don’t exaggerate because the bites taste already savory.
How to make Starbucks egg bites at home
There are two ways to prepare this recipe: the traditional way that blends eggs with cottage cheese, and the “no-cleaning” method that whisks all ingredients in a bowl. I recommend using a blender, it results in velvety and creamy egg bites. But the bowl is ideal if you want to feel the texture of cottage cheese curds. Down below, I am providing the step-by-step directions for the blender method.
Step 1 – Prep oven. Preheat the oven to 300°F (150°C) and spray a (silicone) muffin pan with cooking spray or grease it with oil. Place a rack in the center of the oven and add a second rack beneath it. Then, fill a large baking pan with cold water and place it in the lower rack. This will create a “bath of steam”.
Step 2 – Blend. Add to a blender eggs, cottage cheese, salt and pepper. Blend until just combined, but do not overmix. Over-blending the eggs would incorporate too much air and ruin the texture of your egg bites.
Step 3 – Add extras. Chop the turkey ham into rough pieces. If you go for bacon, make sure to cook it in a skillet in advance. After chopping, add the ham to your egg mixture along with shredded Gruyère. Use a spatula or fork to combine. - Use a silicone muffin mold – This ensures that the egg bites do not stick to their tins. If you don’t have it, grease the muffin pan with cooking spray, olive oil or butter very well.
- Bake at low temperature – For the best texture, set your oven to 300°F (150°C). I also recommend baking them in the middle rack, with a water pan beneath it. This creates a steamy environment that will keep your egg bites soft and fluffy.
- Add your own touch – Customize this recipe with your favorite extras, such as diced bell pepper, chopped spinach and diced tomatoes. Changing cottage cheese with cream cheese or ricotta may be a good choice, too.
Meal prep and storage
These copycat Starbucks egg bites are great for your weekly meal prep. Prepare them ahead, then keep in the fridge or freezer until you are ready to serve. Here are more details.
- To store. After baking, let cool completely to room temperature. Once they have cooled, transfer to an airtight container and refrigerate for up to 4 days.
- To freeze. For a longer storage, place them into zipper bags and freeze for up to 3 months. They will keep very well.
- To reheat. If frozen, take the desired amount out of the freezer and let thaw in the fridge overnight. Reheat in the microwave for about 30 seconds, or bake at 300°F (150°C) for around 5 minutes. If in a rush, remove from the freezer and microwave directly for 30 seconds to 1 minute.

Ingredients
- 6 large eggs
- 1 cup (220 g) cottage cheese, full fat
- ½ cup (60 g) shredded Gruyère, substitute with shredded cheddar
- ¼ tsp kosher salt, more to taste
- ¼ tsp black pepper, more to taste
- 4 slices turkey ham, substitute with ham or bacon
