This Starbucks Egg Bites Recipe is perfect for high protein breakfasts, on-the-go snacks and meal prep. Quick, easy and so simple, it comes together in 30 minutes without fancy sous vide tools.
½cup (60 g)shredded Gruyèresubstitute with shredded cheddar

Preheat oven to 300°F (150°C) and spray a (silicone) muffin pan with cooking spray or grease with oil. Place a rack in the center of the oven and add a second rack beneath it. Fill a large baking pan with water and place it in the lower rack to create steam.
Add to a blender eggs, cottage cheese, salt and pepper. Blend until just combined, but do not overmix. As an alternative you can also whisk all ingredients together in a large bowl.
Chop the turkey ham, then add it to the egg mixture along with shredded Gruyère. Use a spatula or fork to combine.
Fill ⅔ of each muffin mold. Sprinkle with more diced ham on top, if you desire.
Bake in the middle rack of the oven for 25 to 30 minutes, or until they have set in the center. Let cool before serving.

Ingredient Notes
Eggs: You can substitute 2 whole eggs for 3 egg whites (approximately ⅓ cup or 80 ml).
Cottage cheese: I recommend whole milk full fat cottage cheese, it provides a better texture and richer flavor.
Shredded Gruyère: Shredded cheddar cheese (full fat or low fat), shredded mozzarella and shredded Swiss cheese are great substitutes.
Turkey ham: Substitute with regular ham or bacon. If using bacon, you will need to cook it in a pan before adding it to the egg mixture.
Extras: You can include additional ingredients such as chopped spinach, chopped red bell pepper or diced tomatoes.
Preparation Notes
Baking: I recommend placing a baking pan with water in the lower rack of the oven while the egg bites are cooking. This creates steam, which ensures that they remain soft without becomes overly crispy on top.
Muffin mold: Use a silicone muffin mold greased with oil for easier removal.
Mixing: I suggest blending eggs with cottage cheese, as it creates a richer texture. If you prefer to chew the cottage cheese and feel more texture, stir all ingredients in a large bowl without blending.
