What is an over easy egg?

Cooking an egg over easy refers to both preparation method and to doneness of the yolks. Over easy eggs are fried eggs which are flipped over and cooked on the other side, until whites are firm but yolks are still runny. The term “easy” stands for the doneness of the yolk. Unlike over hard eggs and over medium eggs which have a firmer yellow, in this case the yolk should still be runny. Thus, over and easy eggs.

To make eggs over easy, you start by frying them on a hot skillet with butter. After 2 minutes, flip over and cook for 30 seconds more. By now, the white should be cooked while the yolk should still be oozy. Keep in mind that cooking times may change slightly, based on egg sizes. I used a large one.

Tips for perfect over easy eggs

The first tip is choosing high quality fresh eggs, preferably large and from chickens raised on grass. I’ve found that grade AA eggs offer the best flavor, with rich, oozy yolks.

Cook eggs in butter, unsalted or salted. In case of allergies or intolerances, you can also opt for dairy-free options. But butter is key, it elevates the taste, making it richer and more savory.

Fry on a cast iron skillet or a non-stick pan, greased with butter. These pans are ideal as they prevent eggs from sticking and ensure that they easily slides out once cooked.

The last tip is to cook eggs over low medium heat, one at the time without overcrowding the skillet. Also, the time for cooking an egg over easy may change slightly, based on sizes. This recipe uses large eggs, but small or medium ones may need less.

How to store over easy eggs?

After making eggs over easy, let them first cool to room temperatures. Once cooled, place leftovers in an airtight container and refrigerate for up to 2 days. To reheat, warm them in a cast iron skillet with butter, or quickly microwave. Do not overcook to prevent the yolk from becoming firm.

When to flip eggs over easy?

Flip eggs over once edges are set and the whites are mostly cooked, but the yolk is still runny. Then, fry on the other side for about 30 seconds more. This is best way to cook eggs over easy, quick and simple.

Are over easy eggs raw?

The perfect over easy egg is not raw. It should have a fully cooked white and a runny yolk, it should not be raw. For this reason, they are perfectly safe to eat.
