- 1 tsp butter or oil
- 1 large egg
- salt and pepper to taste
Place a cast iron skillet or non-stick pan over medium heat, melt butter or heat olive until warm.
Lower heat to low medium, then crack in egg and cook for about 2 - 3 minutes. At this point, the egg whites should be firm while the yolk should still be runny.
With the help of a silicone spatula, flip egg and cook for an additional 30 seconds on the other side. Allow the white to cook but not the yolk, it should still be runny.
Remove eggs from the skillet, then serve with salt and pepper to taste.
