This 2 ingredient caramel sauce is going viral on all social media. Yesterday I was on the treadmill at the gym when my girlfriend told me “There’s a new trend: Olive Oil Caramel.” At first I was quite skeptical, but after seeing it again on my Instagram, I knew I had to try it. I love caramel, and I love it even more if it is healthy and refined sugar-free like my keto caramel sauce or this olive oil caramel.

Wow! If you wonder how the viral caramel tastes like, let me tell you that it tastes sweet and rich like the real thing. But with NO sugar and NO dairy. Vegan and gluten-free. This sauce goes so well with chocolate cottage cheese ice cream, keto ice cream, protein pancakes, protein muffins or fruit. This morning I drizzled it over my cottage cheese brownies. What a great combination!

Why you will love olive oil caramel

  • Quick and easy – You only need 2 simple ingredients, 3 minutes of your day and a bowl to make the TikTok viral caramel with olive oil and maple syrup. This may probably be the easiest sauce ever, the perfect quick fix for your ice cream toppings and desserts.
  • Healthy and vegan – Made with just olive oil and maple syrup, the viral caramel is a healthy alternative to the regular sauces you buy. Refined sugar-free, dairy-free, gluten-free, free from artificial sweeteners, and completely vegan.
  • Sweet and thick – Whisk olive oil with maple syrup for abut 3 minutes and you’ll be impressed at the result. The sauce will get rich and glossy like real caramel. Or add a pinch of sea salt to make healthy salted caramel.
  • Versatile and customizable – The newest viral caramel comes in handy for literally any occasion. Whether drizzled over cottage cheese pancakes or enjoyed on top of fruit, there are so many ways to serve it. Oh, and it can quickly be customized with the addition of cocoa powder, salt or vanilla extract.

2 ingredient caramel recipe

The viral olive oil caramel recipe only requires 2 ingredients: olive oil and maple syrup. That’s pretty much it, so simple. But still, there are a couple of things you should know before jumping straight to the preparation. Read further to learn more.

  • Olive oil. Make sure to choose high quality olive oil, it will produce a tastier and healthier caramel. I recommend a good olive oil that doesn’t taste too strong, or it will be pretty noticeable in the caramel. Since extra virgin olive oil is raw and unprocessed, it may taste too much. But if you like it, then feel free to use it.
  • Maple syrup. Use pure maple syrup without additional ingredients like corn syrup or artificial flavorings. For a rich and thick olive oil caramel sauce, the maple syrup should be cold from the fridge.

How to make viral olive oil caramel sauce

  1. Step 1 – Mix the ingredients. In a medium bowl, combine olive oil with maple syrup and optionally a pinch of salt. Whisk well for about 3 minutes, until the mixture emulsifies and reaches a thick texture.
  2. Step 2 – Serve or store. Enjoy olive oil caramel immediately, or place in a mason jar and store in the refrigerator for a maximum of 7 days. Before serving, whisk the sauce to reestablish the original consistency.

Storage directions

To store olive oil caramel, pour it into a mason jar or a small food container immediately after whisking. Seal the jar or container with a lid, then refrigerate for a maximum of 7 days. When you are ready to use it, take the sauce out of the fridge and quickly whisk once again to restore a smooth texture. This is necessary, since olive oil tends to separate from the maple syrup in the fridge.

Is the viral caramel healthy?

Absolutely, this is the easiest healthy alternative to caramel! The TikTok caramel is made with just olive oil and maple syrup, both of which are two natural and minimally processed ingredients. Plus, they are also packed with nutrients. Olive oil is rich in heart-healthy monounsaturated fats and antioxidants, which can reduce inflammation and improve cholesterol levels. Instead, maple syrup contains minerals like zinc and manganese, along with antioxidants. Unlike regular caramel which is loaded to the brick with white sugar, this sauce provides healthy nutrients and avoids harmful additives or high fructose corn syrup.

Success tips

  • Use high quality olive oil and pure maple syrup. Not only this ensures a sweet and delicious flavor, but good quality ingredients are usually healthier and more nutritious.
  • Pick an olive oil you like. When it comes to olive oil, it is important that you choose one that tastes delicate and fruity. Avoid olive oil with a strong flavor, or it may cover the sweetness of maple syrup.
  • Start with cold maple syrup. Mixing olive oil with cold maple syrup helps the caramel thicken faster and produces a better texture.
  • Whisk before serving. If you store leftovers in the fridge, the fats in the oil may separate from the maple syrup. Don’t worry, this is completely normal. Simply mix it all up until smooth and enjoy.
  • Customize the sauce to your likings. This maple syrup olive oil caramel recipe tastes delicious already as it is. But if you want something different, then try mixing in other ingredients such as cocoa powder, ground cinnamon, vanilla extract or sea salt. I love salted caramel!

FAQ – Frequently asked questions

How can I replace olive oil?

This recipe works best with olive oil. But if you don’t have it or prefer not to use it, olive oil can be replaced with a good avocado oil. I do not recommend low quality seed oils, as they are poor in nutrients and almost tasteless.

How can I replace maple syrup?

Maple syrup can be replaced with honey (raw honey is my favorite), agave syrup, coconut syrup or date syrup. I haven’t tested out all those options by myself yet, but as long as you use a liquid sweetener the recipe should work. Do not substitute with regular sugar or granulated sweetener.

Can I use sugar-free maple syrup?

Yes, you can make low carb keto olive oil caramel by replacing regular maple syrup with high quality sugar-fee maple syrup. Or try my keto caramel sauce!

Do I need to cook the caramel?

No, this recipe does not require cooking. Mix all ingredients until smooth and thick without cooking, baking, or microwaving it.

Great taste – however, I followed the recipe but ended up with a still-liquid syrup. Not thick like caramel at all. Anyone else?

    1. Hey dear Joy,
thanks a lot for your comment. I am happy you liked the taste. Regarding the runny texture, I recommend making sure that the maple syrup you use is cold. It needs to be cold, otherwise the caramel won’t thicken as desired.
      Have a great day,
